PING: Koko, cheese chilli 'rellenos' thingies.

I ended up doing just a plain version, for the non-heat lovers, and my "Fire
in the Hole" version.

All I can say is...... they went off like a frog in a sock!!!

I was flat out in the kitchen putting out 2 X 12 cup trays at a time, and no
sooner did they go out, than the serving trays came back empty!!

The SO told me later that there was a distinct demarkation line .... one
going to the non-spicy, and the other to the spicy :-)

I used a Tasty Cheddar, Mozarella, and Parmesan mix for the cheese, and mixed
it into a 5 lt jug that had about 3 dozen eggs, 600ml of cream, and about the
same of milk, and topped off with some smoky bacon (uncooked) with 2 large
slices of crispy fried Pancetta all chopped up and mixed in as well.

Because of the clamour for more coming from the multitude, I didn't have time
to get all fancy and place sliced jalapenos in the spicy ones, so just gave
them an extra squirt of Srirachi chilli sauce on the bases before filling
with the cheese mix.

I've had several people come up to me in the days since and tell me that they
loved the food, especially the "little cheese chilli things" at the beginning
:-)

So thanks to your idea/inspiration, this has now become one of my "signature
dishes" ;-)

That's wonderful!!! But it's your cooking expertise that made it
great.
I feel like I had a little part in making your SO's party a success,
thanks so much for letting me know.
