Splenda Snicker Doodles Cake

1 cup fat free milk
1 t. baking soda
2 ½ cups Splenda
½ cup reduced fat-calorie margarine
½ cup no-fat sour cream
2 eggs, beaten or equivalent in egg substitute
2 ½ cups cake flour
2 t. cream of tartar
1 t. ground cinnamon

Preheat oven to 350. Spray a 9 x 13 cake pan with butter-flavor
cooking spray. In a small bowl combine milk and baking soda. Set
aside. In a large bowl, combine 2 cups Splenda, margarine, sour
cream, and eggs,. Stir in milk mixture. Add flour and cream of
tartar. Mix gently just to combine. Spread batter evenly in into
prepared pan. In a small bowl, combine cinnamon and remaining ½ cup
Splenda. Evenly sprinkle mixture over batter. Using a fork, swirl
cinnamon mixture into batter. Lightly spray top with butter-flavored
cooking spray. Bake for 18-22 minutes or until a toothpick inserted
in center comes out clean. Place pan on a wire rack and allow to cool
completely. ( Fake milk should work. Don't know if sour cream would
be a problem or not.)

165 cal., 5 gm fat, 4 gm protein, 26 gm carbs, 231 gm sodium, 49 gm
calcium,
1 gm fiber

If Squeaks has google groups blocked, she won't see this. Would
