Nut flours are produced by first chemically extracting their oils and then the dry oil free nut meats are milled into flour... the oils, the best part, is used for cosmetics, pharmaceuticals, paint, lubricants, and such... if you're smart you'll forget all about nut flours, consume whole nuts... you can easily make your own nut butters. |

Nope, you cannot make nut flour at home, least not easily... you can make nut butter at home but to make nut flour you need to first extract the nut oil... and why would you want to, then all you're left with is nut trash. Nut oil is the most nutritious part. |

It might not be next to the regular flours, but there should be a section with small bags of "exotic" flours, like buckwheat, etc. You should find the almond flour, sometimes called almond meal there. My supermarket is far from "gourmet" and they have it. Store the unused in the freezer. It is made from nuts and can go rancid -- Janet Wilder Way-the-heck-south Texas Spelling doesn't count. If all else fails, just add 1/8-1/4 tsp almond extract to your batter. Clafoutis batter is essentially pancake batter, and, as I understand it, the almond flavor originally came from leaving the cherry pits in the fruit. When cooked, there was a light almond flavor from the amygdalin in the cherry pits. Yes, I can get the meal/flour at my supermarket (HEB) but I usually don't bother. I know you've already made the recipe, but I saw yesterday (Molly Stone's) that Bob's Red Mill has an almond flour product. http://www.bobsredmill.com/almond-meal-flour.html I also noticed that they have the same corn flour (finely ground corn) that I bought in bulk at the green grocer. http://www.bobsredmill.com/organic-corn-flour.html Bob's is very expensive! If you run the grind continuously it moves towards nut butter. If you pulse the grind it moves towards flour. I don't know if it's the air settling out when pulsed or the temperature going up on the continuous grind. Nut meats cost more than any grain so nut flour is expensive. But it's delicious enough to be worth the extra money. Almond flour, paste, butter. It's a spectrum of how it was ground. |
