Open the package. Rinse the tofu under running water. Sniff it. If
it doesn't smell sour, use it.

Two days is probably fine, but the above works for any package of any
age.

Expiration dates have a good safety factor built in. I'd say you are good
for a week, maybe even more with an unopened package.
Most food products have a rather gradual decline and the date assures
perfection. I've seen products perfectly usable even after a few weeks, but
that is dependent on many factors so I'd not make a sweeping OK. If you see
mold on a product, don't even look at the date, just toss it. Could have
been a defective package or poor handling along the way.

Under no circumstances should you use it, even if it looks and smells
perfectly good.
Don't you know that all tofu manufacturers plant little toxic bombs in
their packages? At exactly 1 minute after midnight on the day after
the expiration date these bombs will disperse all sorts of disease
organisms throughout the product.
Evacuate your domicile immediately and call the hazmat team from the
nearest pay phone.

Why do you think I was putting the size information of the wok I was
buying form the wok shop? That was to differentiate from the wok I
won. In fact, I specifically said that it was for my brother. Since he
didn;t have many kitchen stuff, the lid was needed. After I got the
dome one for him from a local store, I learned that the lids sold at
the Wokshop were better quality and so bought one along with the wok
and decided to keep the one bought locally cus it's along drive to
return it. Beside, someday, I plan to get a 12 in wok. I am not buy it
now because I spent a lot of money between clothes shopping and buying
kitchen stuff for my brother. In our family, we don't ask money from
each other. We just buy an give.

I was having suspicion because it was tofu; I forgot that I got it
Safeway. I did buy a fried tofu from the Asian store a few weeks ago
(for the first time). Though they have sealed pacakges with no labels
that's much cheaper, I bought the one with the label ensuring that I
was getting the one with factory sealed that wasn't done at the
store. BTW, the last time I was at an Asian grocery store, I used the
rest room and saw an employee lady not even rinsing her hand and went
straight back to work.

Not just Indian, but a few other countries too. Our cleaning lady used to
go nuts when she saw footprints on the seat. I guess it is natural for

I know. I jut play it safe by buying something first and eat/drink it
if I needed to do that though there was once that I was almost done
with shopping but started feeling like I really needed to get some
sugar + fluid and so bought something and drank 1/3 of it right where
I picked that up an dplaced it in the shopping cart.

What I learned is that Tofu is handy when one neess to eat and not
want to feel full. In the past, I bought Tofu like once in long long
time (like 1-2 years) and even that started only a couple of years
ago. Last time, I lost half of the box when I didn't use it within a
week of opening. This time, only time will tell whether I will eat
the whole pot of soup (the cooked version).

Grin, yes but it's a delicate one. Tofu is more used to stretch a dish and
to add a texture appeal. It's also high in lots of stuff good for you and
not high in stuff bad for you (unless allergic to soy products).

One of the things I like about my local Asian grocery is the fresh made
local tofu. It doesnt last as long, having no preservatives, but it is more
flavorful with an almost 'scrunch to the teeth' firmness.

I guess it's a matter of taste of which I have never detected any in
plain tofu. There are a number of things you can do to give it flavor
and texture.

An interesting thing to do is to freeze dry it, Japanese farmhouse
style. While the farmers used to wrap the tofu in straw and let it
freeze at night and melt during the day, you can reproduce this with
your freezer. Freeze for 3 days, thaw and drain in regular fridge and
repeat. The product is chewy and can be flavored with soy sauce and
garlic.

I make fried tofu occasionally. Cut the fresh tofu in about 1 inch
squares. Dust with Lawry's and then fry in olive oil. Drain on paper
towels. My kids love it with the crunch and the slight Lawry's flavor.

I tried dry-frying tofu for the first time a couple days ago. I pressed it,
then marinated it in half soy sauce and half spicy mango bbq sauce. It was
so good I ate it all while watching a baseball game.

While have become fond of tofu soup recently - made a spicy one today;
last time was a simple but very nice and light one just a few
ingredient, I have become interested in ysing fried tofu is making
Burmese style noodle salad. Note: Salad is not used in this dish.

You want cooking advice from me? I'll give you one (more like a snack
but heavy) right now. Get some durian fruit from local Asian store.
Not the frozen one already taken out but the fruit. Google "durian" to
see the pic. Cook in milk with some sugar. Eat by dipping/soaking
bread (whole slice) in it. Sometime a bit of sweet rice is alos mixed
in when eating it. Of course, this is a seasonal dish. Most of the
time, durian was eaten as the way it came out of the pocket though
there is a way to cook it with palm sugar and eat it like candy.

I'd be generous and give you another one that involves no cooking.
This is considered a fun food eaten after a regular meal if one feels
like it.

In a bowl style plate, on top of some hot white rice (not too much),
put the meat of one whole mango (no need to cut nice and neat as
they'd be mixed in and become mushy), pour hot milk, add some sugar,
and mix them all and eat it. Usually for children when mango season
arrived but I once saw my cousin - already graduated from Med school
and alreday had a kid - eating it. Even I couldn't eat that anymore at
that time (I was 16). He's about 13 years older than me.

I am realizing that almost half of what I consume (at home) must be
either expired of bera expiration date sinc eI fill th supply ahead so
that I won't run out of them - egg, cheese, milk, juice, most
veges,execept tofu. With tofu, it's just left out until it's about to
expire.
