The cleanup time alone would make chopping with a good sharp knife much
faster. I own a good chinese chef's knife that gets used for most
chopping jobs. A quick rinse and wipe with a towel and back in to the
drawer.

As far as making the pesto that it showed, I use a blender for that.

No, I don't. Sorry if you do, I wasn't thinking of that kind of
application, I was just giving my opinion as asked for by Manda.
I would think a little electric chopper or one of those junior
cuisinarts would be the easiest for
someone with rheumatoid arthritis, nothing to even pull and easier to
disassemble and wash.

Minicuisinearts crush the herbs, which this outboard motor widget,
with its weaker mechanism, does not seem obviously to do. IT remains
to be seen if that is true, of course.

Assuming it's dishwasher-safe, it'd be fine for maintenance.

RA isn't the only restriction a cook can have, there are any number of
problems that make kitchen work-arounds necessary, and there are even
more folks who like kitchen gadgets just for fun. Someone has to keep
the Chinese factories humming.

One of my friends has arthritis and I never thought about that. The
little mini food processors would work well for that. I love mine and I
use it often.
