Atkins/Greenwich rice substitute???
Anyone have any suggestions as to a substitute for rice to serve stir

Seriously, mung bean sprouts make a nice foil for stir-fry dishes. I steam them and add just a sprinkle of rice vinegar. Don't overcook, you want them hot but still crisp.
