Default 2 New additions in one week! Help with sides?

Well, my sister in law had her baby a little early (he was due the 28th, she
had him the 8th), so baby Owen is finally here! Then, this weekend the
rescue that we got our Schnauzer, Lucy, from asked us if we'd be interested
in a companion for her. So, now we have Oscar as a new addition to our
family as well.

Anywho, this next weekend we are having a small party to celebrate the new
additions and touch base with some friends we haven't had chance to spend
time with. There's going to be pumpkin painting/carving for the kids, and I
have some of the menu planned, but I was hoping for some help from the kind
folks here.

Appetizers: Various veggies, dip, pate, crackers, olives, and an assortment
of cheeses.

Soup: Roasted Pumpkin Soup

Dinner: Chicken Saltimbocca. Now, here's where you come in....what side
dishes would you make? I don't want anything too heavy, but I'd like it to
compliment the chicken. For anyone who doesn't know, the chicken dish has
sage, prosciutto, provolone, shallots...just to give you an idea of the
flavors.

Dessert is Deep Dark Chocolate cake, prepared in a bundt pan, and a smaller
round (ball) pan. The first half round is placed in the center of the cake,
and the other placed in front for a head. The whole thing is then drenched
in ganache and decorated to resemble a spider. For legs, use 2 pretzel rods
per, dipped in chocolate, connected with a marshmallow in the center at
different angles. For the non chocolate eaters (can you believe there are
such people! *gasp*) I am also serving an apple crisp, as well as a pumpkin
seed based snack mix. Of course, coffee and tea too.

So back to dinner...any ideas? :-)

Also baby Audrey arrived 10/17/04, two weeks early... 7lbs 14 ounces, 20 3/4".
Now that I'm a grampa I guess an attitude change is in order... no "F" woids
around the baby... but doesn't mean any yoose gets a free ticket, so watchit!
Ahahaha. . . .

Last time I made Chicken Saltimbocca, I accompanied it with angel-hair pasta
with this sauce, which is basically the sauce for Chicken Carciofi without

Melt butter in oil in a large skillet. Add garlic and cook until fragrant.
Sprinkle on flour and cook to make a roux. Stir in chicken broth, wine,
marjoram and bay leaf. Bring to a boil, stirring constantly. Add artichoke
hearts and 4 slices of lemon. Reduce heat and cover. Simmer 10-15 minutes,
until sauce begins to thicken.

Discard bay leaf and lemon. Garnish with remaining lemon slices and fresh
parsley sprigs. Serves 4.


In addition to the pasta, I'd offer some kind of vegetable, e.g.:

Damsel's Green Beans with Hazelnuts and Lemon

1 1/2 pounds green beans -- trimmed
1 1/2 tablespoons olive oil
1 1/2 teaspoons lemon zest -- freshly grated
1/3 cup toasted hazelnuts -- chopped fine

In a kettle of boiling salted water cook beans until just tender, 3 to 8
minutes. Drain beans in a colander and in a large bowl toss while still hot
with oil, zest, nuts, and salt and pepper to taste. Beans may be made 1 day
ahead and chilled, covered. Reheat beans, preferably in a microwave.

A simple pasta aglio e olio (garlic and olive oil) is good with this.
Toss a little copped fresh parsley in when ready. You could also do a
risotto, but with everything else, that may be a bit labor intensive.
If you have the time, a mushroom risotto would be good. I'd suggest
chanterelles for the shrooms. Other starchy options include polenta or
roasted potatoes.

For veggies, consider asparagus, broccoli, or spinach. Spinach can be
quickly "stir fried" in garlicky olive oil and is delicious. I mean
quickly, so it shouldn't be mushy at all. Asparagus (white is somewhat
festive if a bit spendy) is good with perhaps a fried egg on top, or
with a simple sauce. A dish or broccoli orichette (pasta) is fairly
simple and looks good. The later combines a starch and veggie, so may
be the simple way out, and can be dressed up in endless variations. I
thought a baked zucchini dish would work with the chicken, but you are
already using a squash in the soup.

If you want to get fancy for the celebration, a polenta ring filled
with creamed spinach and pearl onions makes a good presentation on the
table. Go easy with the creamed part so it doesn't overpower the
chicken. The polenta ring can also be filled with a mushroom dish, but
they tend to be soupy, and you have that already.

Another idea is cauliflower with black olives, cherry or grape
tomatoes, and sugar snap peas. Dress or lightly marinade in a mild
vinaigrette. The mix of colors makes a good presentation, and it is
both healthy and tasty. Finding good tomatoes may be difficult this
late however. Fresh (mild) herbs like parsley add to the presentation.

He's an adorable kiddo, looks like his dad. So far his big sis (she's 4) is
handling it all pretty good, especially once mom and baby were released from
the hospital. I know alot of people think big whoop, but I take being an
auntie very seriously
