Semolina is a kind of flour. It is one of the kinds of flours that Italians
use to make pasta. Good cooking.

Semolina flour must be made from 100% Durum wheat.
The best (and the most) Durum wheat in the world is grown in North
Dakota. Much of the wheat is exported to Italy, BUT in the last decade
there have been a number of farmer owned (co-op) companies that make
pasta. One great brand is "Dakota Growers". No, I do not have stock in
the company (I wish!) but occasionally I mail the pasta to my sister
in PA.
