Help: Overabundance of squash and zucchini
 
Hi all. My garden is producing squash and zucchini much faster then I
can consume them. Does anyone have some recipes for them that freeze
well?

Summer squash doesn't freeze well, but baked into cake/bread it then freezes
beautifully.

3 c Flour
1/4 c Cocoa
1 TBSP Cinnamon
1/2 tsp Baking Powder
1 tsp Baking Soda

3 Eggs
1/2 c Oil

1 Banana
2 c grated Zucchini
1 c chopped Nuts
1 c Semi-sweet Chocolate chips or chunks

Heat oven to 350. Grease two 8 1/2 x 4 1/2 pans. In large bowl, combine
Flour, cocoa, cinnamon, Baking POWDER & SODA, & Salt. Mix well and set
aside. In medium bowl, combine Sugar & Eggs; beat well. Add Oil, vanilla &
Banana; beat until combined. Stir in Zucchini and add FLOUR Mixture. Stir
until just moistened. Stir in Nuts & Chocolate Pour into pans & bake 55-60
min. Cool in Pans for 10 min. Then finish on racks.

Hi Lynda!
My dad grew up in the depression and would tolerate no wasted food -
especially produce. This is what he did with the ubiquitous zucchini.
Bill's Zucchini Bread
2 cups zucchini chunks
1 whole orange cut into chunks - peel and all
1/2 cup raisins
2 cups white sugar
3 eggs
1 cup oil
3 teaspoons vanilla
1 teaspoon salt
1 teaspoon soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
3 cups all-purpose flour
1 cup chopped walnuts

Grind the zucchini with the orange and the raisins in a blender or
food processor. (You can use frozen shredded zuchinni if you thaw it
and squeeze out all the liquid.) Beat the eggs, sugar, vanilla and oil
and add the zuchinni mixture. Stir in the salt, soda, baking powder
cinnamon,flour and nuts. Fill greased loaf pans about half full. Bake
at 325° for about one hour or until toothpick comes out clean. Makes 2
large or 3 medium loaves.

Also, the only vegetable I dislike is eggplant - I substitute zucchini
in moussaka etc.

Have you tried dressing them up in cuty lit'l bonnets and leaving them
anonymously on people's doorsteps? HTH :-)

1 cup all purpose flour
2 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp. ground allspice

3 cups grated zucchini
1 cup oil
4 eggs

Combine all dry ingredients in a large bowl. Add the eggs, oil, and
zucchini and beat well. Pour into greased 9x13 pan and bake in 325º
oven for about 45 to 50 minutes.

Notes: I like this served warm (not hot) without any frosting. You
should be able to use all all-purpose flour if you want a it a little
more delicate.

some such) to squeeze out the liquid. That can be reserved for soup
etc.

The solids (and there won't be much) are then sauteed in butter with
some garlic, salt, and pepper.

It is a wonderful dish...

I disagree that squash doesn't freeze well. I slice it into fairly thick
slices and freeze it in meal-size batches. When I'm ready to eat it, I place
it in the top of a steamer for a few minutes, then into a pan w/butter, salt
& pepper.

It's not as good as fresh, but it's certainly edible.

I don't know about freezing, but I shred it and put it in pasta
sauce. I also slice it into matchsticks and saute in a little garlic
butter and season with salt, pepper and rosemary to serve along side
dinner. I make lots of egg dishes like frittatas, and zucchini diced
and cooked in those are wonderful. The kids eat them raw. There's
always zucchini breads and grilled zucchini as well.

I don't know about freezing, but I shred it and put it in pasta

You can shred the very overripe squash and zucchini and they freeze OK.
They are good in quick breads or for stirfrying.

The younger ones are not substantial enough to freeze and they turn
watery, mushy, and oddly tough, all at the same time. :-P

Not sure about the freezing part, but last night I had several different kinds
of zucchini coins and some kohlrabi sauteed in olive oil and seasoned with
salt, pepper and some Penzey's Crouton Seasoning. Delicious!
