Default Black Cherries

Are the delicious black cherrys in Black Cherry ice cream processed like
Marachinos?

Where can I purchase them in their natural state or processed form? What
brand name?

Nothing is as processed as a Maraschino Cherry. Seriously - they're
brined, colored, flavored, and sugared on top of that.

Typically the cherries you find in Black Cherry Ice Cream would be canned
or frozen. Your more upscale botique ice cream makers would use fresh,
though they would need to soak them in a sugar/alcohol bath prior to
mixing them in, as fresh cherries don't have enough sugar to maintain a
scoopable softness in ice cream.

Natural black cherries can be found in most metropolitan supermarkets.
Canned varities are even more commonplace. I've typically seen Oregon
Brand in the stores around here. Look in the canned fruit section of your
local grocer.

I found something similar at Trader Joe's once. Maybe not exactly what you're
looking for, but as close as I can think of.

With the jarred fruits, peaches and such, I found a jar of sour cherries (they
look black to me) in syrup. They were really good with my cottage cheese! I
would imagine they'd make great ice cream.

It may be worth a look, at any rate.
