Nyuk Nyuk 2 Lb. ground pork. 3 1/2 tsp. salt 6 Tbl. pure ground red chile 6-20 small hot dried red chiles; tepine, Thai dragon, pico de gallo or the like, crushed 4-6 cloves garlic, minced 2 Tbl. dry leaf oregano 2 tsp. whole cumin seed, crushed 1 tsp. fresh ground black pepper 1 1/2 tsp. sugar 4 Tbl. good cider or wine vinegar 2 1/2 Tbl. water Got it off the web, pretty authentic. You can make it into patties, saute it coarse, or stuff into casing and even smoked. Paul |

A search on Google found several recipes but they seem to use no paprika and instead use chile powder. Not quite the same. Here is one: http://southernfood.about.com/librar...3/bl30103q.htm and another: http://recipes.chef2chef.net/recipe-...4/A04761.shtml and one mo http://www.1worldrecipes.com/recipe.asp?r=126 and lastly: http://www.recipezaar.com/62148 Here is one that does contain paprika but also chiles. Real chorizo comes from Spain originally and is not picy and does not contain chile powder or spicy peppers. http://www.globalgarden.com/Chile-He...0003/0848.html For some reason most of these seem to be some kind of Mexican variety of chorizo. But finally found one that sounds closer to the kind of chorizo made in Spain. It took me 7 pages to find this: http://www.1worldrecipes.com/recipe.asp?r=599 (hot pimenton means hot paprika but I suggest you use sweet paprika). Let me know which you try and how you like it.
