Shrimp bisque question...
 
Would shrimp bisque made today keep refrigerated overnight to serve
tomorrow?
I know it will be safe but I was wondering about flavor etc. Is it just as
good the next day?

Fish chowders flavor generally decline rapidly, and cream versions can break.
Many shrimp bisque recipes say they can be made a day ahead but I'd not... fish
stew does not improve the way beef stew does... so how long can it take to cook
shrimp, what, 3 minutes? A typical seafood bisque should require no more than
45 minutes, start to finish.

I just reviewed dear Julia's scallop soup recipe to be sure and, as I
remembered, this seafood & cream-rich soup can happily be refrigerated
overnight. Float a little cream on top to prevent a skin forming.
