Eggless Icecream Recipes
Hi all,
I just bought a General Electric Gel Canister Ice Cream Maker and I'd like to test it out. I'm looking for a chocolate ice cream recipe that doesn't have eggs. I've searched on the internet with no luck. Can anyone help me out. I really appreciate it Thanks a bunch, SPOONS |

Very few of the recipes in this book use eggs - here's one: Simply Chocolate Ice Cream - makes about 5 cups 2 cups heavy cream 2 cups half-and-half or light cream 3/4 cup sugar Dash of salt 4 ounces bittersweet or semisweet chocolate, finely chopped 2 teaspoons vanilla extract 1. In a heavy saucepan, combine the heavy cream, half-and-half, sugar, and salt. Cook over medium heat, stirring, until the sugar dissolves and the mixture is hot, 6 to 9 minutes. Remove from the heat. 2. Immediately add the chocolate and stir until melted and smooth. Partially cover and let cool 30 minutes at room temperature. Stir in the vanilla. Refrigerate, covered, until very cold, at least 4 hours or as long as 3 days. 3. Pour into the canister of an ice cream maker and freeze according to the manufacturer's directions. Eat at once or transfer to a covered container and freeze up to 8 hours. There are several other chocolate ice cream recipes in this book, such as "Frozen Hot Cocoa", "Choco-Light Ice Cream", "Chocolate Brandy Alexander Ice Cream", and "Chocolate Rum Ice Cream", none of which contain eggs. Spoons' gel canister for making ice cream.
I make a container of vanilla and a container of orange sorbet, stirring the sorbet gently into the vanilla as a marble effect. When it is frozen set, it tastes very much like my favorite orange and icecream popsicle! Just a Jeanie |

No I'm not allergic to eggs, I can taste the raw egg & it grosses me out. I really want to make chocolate ice cream with out eggs. Here is one from my grandmother's recipe file: Vanilla Ice Cream 2 C. sugar 4 eggs, beaten 1 dash salt 1½ tsp vanilla 2 quarts half-and-half 1 pint whipping cream 1 quart whole milk Mix first 4 ingredients well with hand mixer. Add whipping cream and half-and-half, mix well. I really appreciate it > > Thanks a bunch, > SPOONS > > The eggyolk serves as an emulsifier in the icecream mix, and you should be able to replace it with a combined emulsifier and stabiliser package such as the Cremodan SE70 from www.danisco.com .. This is a common emulsifier and stabiliser used in commercial icrecream production.. The amount needed depends on the fat content of the mix.. The more fat in the mix the less you need to add... A basic mix would need approx. 0.4% by weight One problem you could encounter if you just replace the eggyolk with a product like the one I mentioned, is that you loose dry matter and water in the mix.. You can compensate for this by adding either water or skimmed milk powder untill you get the texture you want.. A basic icecream mix for industrial use could be something like this for approx 1 kg of vanilla icecream ( approx half a gallon when frozen in an industrial machine ) 0.4 litres whipping cream 40grams of Glucose syrup 120 grams of regular sugar 0.4 litres of water 110 grams of skimmed milk powder 0.4 grams of Cremodan SE70 1.0 grams of vanilla extract Sorry about the metric numbers.. I am not located in the US.. Start by mixing the dry ingredients, add water and and whipped cream.. leave in the fridge for a few hours and put it in the freezer like any other mix.... It is important to give the emulsifier and stabiliser a little time to start working before you freeze the mix Please note that this is an industrial recipe that I adapted for use at home.. I have not tested it with "civilian icecream makers "... You may need a little work to get the texture "just right", but it should be a good start to do some experiments from.. As I said the emulsifier I mentioned may not be available to civilians, so you may need to find another that is available.. Remeber to follow the instructions provided by the manufacturer regarding amounts needed.. I hope this is of some use for you? Have fun /peter ( one of those metric europeans ) |
