Safe Thanksgiving
I declared this week in my introductory nutrition class food safety
week. Monday they heard about the rogues' gallery of bacteria and viruses that can cause food poisoning. Yesterday we discussed practical stuff on how to keep the holiday turkey and trimmings safe from the aforementioned bugs, and I introduced them to the King County (that's Seattle) restaurant inspection report website. Today, with the chapter in Fast Food Nation about the Jack in the Box E. coli outbreak of 1993 as a backdrop, they had to figure out how we could make the federal web of food safety regulations more tightly woven. Even some of the quieter, less curious students chimed in on the discussion. Apparently these had an effect on some of the students. They went home and spread the word about food safety to their families. Sometimes a teacher can make a difference.
