I applaud you supporting the local food co-op. But I can't quite figure out, why not simply use cornstarch as a thickener? It adds no discernible taste to a gravy or sauce, thickens just as well and you don't have to search for it as a bargain because it's already cheap. I have only used the arrowroot for fruit pies, and it's nice for that--thickens up nice and clear. The potato starch creates a very velvety gravy. I like it a lot. |
