Default Dinner party suggestions?

I usually have time to prepare for dinner parties, but for one next
week, this isn't an option. I'll have a couple of hours, but I don't
want to spend all that time in preparation. What are some of your
favourite advance-preparation for dishes? I can certainly think of
some, but I'm interested to know what you think of this...

I think it'd be delicious barbecued.
