Default Freezing cream cheese frosting?

I had the same dilema yesterday when partner wanted carrot cake for his
birthday. I made it as a sheet cake instead of layer cake. Too much
frosting. I do not think it will freeze well. I think it will sperate out
and not be able to whip it back into anything that will hold its shape.
This morning I just made a half batch of cupcakes, put a dollup of frosting
on each and gave them to the neighbor lady with kids. She is always
grateful for my baked goods.

I am curious to hear about other people's results with freezing cream cheese
frosting. One thing that amazes me is the people who rave over my home made
frosting, and think that frosting is something out of a container from Betty
Crocker. Cream cheese frosting is the easiest thing in the world to make,
and it is soooo good.

Actually, it does freeze just fine. Pack solidly into a container, cover
surface with plastic wrap, then cover with lid and freeze. Thaw in
refrigerator, then bring to just below room temperature before using and
beat briefly with mixer.
