Default Looking for recipes using Corn Flake

I know I know... why? I received 4 large boxes and we really don't like to
eat them in a bowl with milk. We don't hate them just don't love them. So,
in this economy I hate to give them away and thought perhaps there might be
some recipes people have liked using corn flakes. I went to the Kellogg
site and there are lots of recipes. I would like one someone has tried and
enjoyed.

I did make the recipe on the box. haha Corn Flakes, chocolate chips,
butterscotch chips and peanut butter tasty, but really how much of that can
one eat and not go into a diabetic coma.

I like blended cornflakes as an alternative to bread crumbs. They are
rather good for oven frying. So much so that Kellogs actually sells corn
flake crumbs.

Yes, they are Kellogg's corn flakes. Apparently boxes with Michael Phelps
on them are being sold cheaply or in my case given away.

Take a cup of flakes and put in food processor. Add s&p, garlic
powder, powdered thyme. Whirl around to mix all to a find grind.

Dip your chicken pieces (skinless or w/ skin) in milk, then egg, and
then roll in the flake mixture... Bake at 350F until done. (Works
great for fish also). Makes the best chicken you have ever tasted.
Adjust herbs and seasonings to suit your palette.

Makes a nice topping for Mac & cheese. Just mix in processor with a
little melted butter or margarine and add as a topping 10 minutes
before your dish is done. Also makes a nice topping for roasted
vegetables added in the last ten minutes.

Aw, c'mon, Lynne, live it up! Make Rice Krispies Treats using corn
flakes instead of Rice Krispies. Crush some and use them on top of
casseroles. Or use them crushed in a breading mixture for fish or
chicken. Think, Woman!! <grin> Use as a meat loaf filler. Transfer
them to an airtight container now and mark the date on the container.
If you still have them in a year, toss them. If you can't toss them,
give them to a neighbor with a request they be tossed.
(I dreamed up my suggestions on the fly.)

There's this thing that Seventh-day Adventists make called Special K
Loaf, and I loved it when I was an Adventist. I got this version off
the web, but it looks about right. The notes are the recipe's author's,
not mine.

SDA Style Kelloggs Cottage Cheese Loaf

* 1/4 Cup Butter or Margarine
* 1 Clove of Garlic
* 1 Onion
* 2 Stalks of Celery
* 2 Tablespoons of an SDA-style Vegetarian Stock like McKays
Seasoning, Broth, or Worthington Gravy
* 1 Tablespoon of Soy Sauce
* 3 Beaten Eggs
* 1/4 Cup of Milk
* 1 Cup of Cottage Cheese
* 3-5 Cups of a Flakes Cereal - Most of the time, Adventists use
Kelloggs Special K Cereal. Im cheap. So, I use generic Corn Flakes
* 1/4 Cup Pecan Meal, Ground Fine (Optional)

1. Preheat oven to 350 F
2. Heat the butter or margarine in a pan
3. Sauté the garlic and onions until cooked
4. Add the celery to the pan and sauté until soft
5. Mix the remaining ingredients in a separate bowl
6. Add the sautéed vegetables to the bowl
7. Let the cereal get a little soggy (about 5 minutes)
8. Place in a generously greased baking pan. It should be 1-3
deep. Do not pack. In fact, use a fork to make it fluffy.
9. Bake at the top rack for 1 - 1 1/2 hour(s)
10. Cut the loaf into 2 x 2 squares

Okay, here you go.

Rhubarb Crisp

This revolting-sounding dessert is actually a delicious use of
rhubarb. My mom got the recipe from a radio program, possibly as
far back as the 1940s! It is my favorite rhubarb crisp.

1/2 c butter, at room temperature
1/2 c sugar
1/2 tsp nutmeg
2 eggs, at room temperature
1/2 tsp vanilla
2 c corn flakes (preferably Kellogg's; NOT the frosted variety)
1 1/2 c toasted small bread cubes
4 c diced rhubarb
1/2 c sugar

Preheat oven to 375F. Grease or spray a pan--we always use
Pyrex--I think a quart and a half or so. I don't remember the
size though.

Blend butter, 1/2 c sugar, and nutmeg thoroughly. Add eggs
and vanilla; beat well. This may look curdled; dont worry
about it. Stir in corn flakes and bread cubes. Place half of
the cornflake mixture in the prepared baking dish. Arrange
rhubarb evenly over the top and sprinkle with remaining 1/2 c
sugar. Cover with rest of cornflake mixture. Bake at 375F
for 35 minutes or until rhubarbs cooked and everythings
piping hot. Cool a bit and serve with vanilla ice cream. You
want it hot enough so the ice cream melts nicely while
youre eating it.

Jill's right -- we tried that tonight, and it was delicious. Wish we
could find some of those cheap "Phelps" corn flakes in our town. We
bought the Safeway brand.

Use 'em in recipes for Scalloped Corn instead of crackers.
or try this (originally from a little Wilton -cake decorating- recipe
book for kids' birthday parties :

Texas Baked Corn

2 (16 oz) cans of cream style corn
1 1/2 cups shredded cheddar cheese
4 eggs
1/4 cup sliced scallions
1 tsp salt
t tsp chili powder (or more)
1 1/2 cups lightly crushed corn flakes - divided

Mix everything except 3/4 cup corn flakes. Pour into greased 9 x 13"
oblong baking dish.
Top with remaining chips. Bake at 400F about 45 minutes.
NOTE: Original recipe calls for 1 cup crushed corn chips (Fritos) I
think this would be fine with cornflakes but I'd bump up the chile
powder and add a shot of Tabasco. If you, like some, like it hot you
could add chopped green chiles or jalapenos.

Oh yeah, I forgot! My mom used to do baked fish fillets with an egg
wash and crushed seasoned corn flake crumbs. Bake on sprayed or no
stick at 400F just until fish flakes.

Can't help with using them up but have to ask why this sentiment? I'd
have thought that the desire to help others out would be stronger in
this economy. Find interesting things to do them, sure, but if you
end up giving some away to somebody who needs free food, how bad can
that be? -aem

They work well on pork chops, too. Think "shake & bake" but add your own

I'm at work so I don't have the book with me, but _Aquavit_ by Marcus
Samuelsson has a recipe for this...stuff... Basically, it's a crumb mixture
of corn flakes, pine nuts, and bacon. You cook bacon until crisp, toast the
pine nuts, toast the corn flakes, then put it all into the food processor to
make it into crumbs. Looking into the book on Amazon, you can see the recipe
on page 273.

About the recipe, the book says, "Once you've tasted this crunchy, nutty,
sweet-salty mixture, you will come up with a million uses for it. It makes a
great crust or topping for chicken, fish, meat, or vegetables, and it can be
used to coat fried shrimp or other shellfish for deep-frying. Sprinkle it
over a salad. You may even be tempted to simply put some in a small bowl and
eat it as a snack."

It's not a bad thing at all. I give things away frequently. Why is it bad
to want to help my family too?

Default Looking for recipes using Corn Flake


In Denmark for christmas people dip a small handful of cornflakes in
melted chocolate with juice of orange to make crispy
candy "tops". I dont like them much, but I dont eat cereals anyway.

Can't help with using them up but have to ask why this sentiment? I'd
have thought that the desire to help others out would be stronger in
this economy. Find interesting things to do them, sure, but if you
end up giving some away to somebody who needs free food, how bad can
that be? -aem

Helping others is a good thing, but taking care of your own family is also a
moral obligation and can prevent needing assistance of our own. I certainly
hope we are not going to judge others by what they don't give away.

Aside from using crushed cornflakes as a coating like bread or cracker
crumbs they are also good to use as a filler as one would use bread or
oatmeal for meatloaf.

I think the movie was "the best years of our lives" and the line was "I'll
just put more cornflakes in the meatloaf"
