After a houseful of guests while we were away I had a batch of leftovers in
the fridge. They has pretty much cooked what I had left out but it was time to clean out the fridge. Leftover 1/2 pineapple. Diced and it became a pineapple upside down cake. Time to put the heavy cream into the NO cream whipper to keep it from spoiling. Leftover rice & 1/3 grilled tri-tip. The tri tip got sliced and then warmed in a 50/50 mix of Yamada marinade & water. The leftover rice became Fried Rice with cabbage & veggies. The pasta sauce is in the freezer. It was augmented with a cooked chicken breast & 2 grilled burger patties all chopped up in the food processor. Tonight we use the last of the green chili with pork. BTW my complements to the discoverer of CRASH potatoes - they're a hit with company. So are you using more leftovers - I still have a problem not cooking for a small army.... :-) Regards Dimitri |

I've got a batch of sausage, eggs and chinese dumplings that will be their breakfast in the morning. I don't feed leftovers to the dogs on a frequent basis so I'm not worried about it affecting their health. They are active enough, they can use the calories... The Corgie won't get any. She's too fat. -- Peace! Om Life isn't about waiting for the storm to pass. It's about learning to dance in the rain. -- Anon. |

Left over pinapple! Heres one from the vaults:) Commercial ice cream and ordinary whipped cream may be used effectively in the following recipe, the "spun sugar" at the end can be eliminated and the alcohol in the liquor while very nice may be dispensed with however for the sake of a more liquid puree of strawberries it should be replaced with either a non alcohol champagne or other appropriate fruity liquid. The recipie can be reduced to half to serve 4-5. Fraises a La Sarah Bernhardt serves 8-10 Choose 3-4 pounds of fresh strawberries and remove their stems. Put 2/3 of the nicest ones in an enamelled tureen, sprinkle them with powdered sugar, add 5-6 glasses of Vieille Cure [curaco or benedictine liquor or any fruit liquor though orange flavour is traditional], and place the tureen on ice. Pass the rest of the strawberries through a fine sieve, mix 250 grams of sugar into the resulting puree, and add it to the rest of the strawberries. Separately, use preserves of pineapple to prepare a fruit pulp as follows: with one fork hold the pineapple in place, and with another fork tear the fruit into a pulp. Sprinkle with 250 grams of sugar and keep on ice. In advance, prepare 1 & 1/2 litres of vanilla ice cream and 3/4 litres of whipped cream Chantilly. To serve: Take a crystal bowl of the necessary size, fill the bottom with vanilla ice cream, and place the whole strawberries on top. Mix the strawberry puree into the whipped cream Chantilly. Cover the strawberries with the pineapple pulp and then add the whipped cream a la fraise. The mixture of the last 2 ingredients should be such as to give the illusion of a beautiful sunset. Throw a lace of spun sugar over this delicious dessert to complete the presentation. __________________________________________________ _______________ The above is taken from a biography of Auguste Escoffier, imo, it is a better recipe than in either his "la grand cuisine" or "ma cuisine" if the archaic nature or overly elaborate preparation needs any further elucidation please feel free to ask for clarification. -- Joseph ( The probability for an event which can happen in two indistinguishable ways is the sum of the probability for each way considered separately) Count de Money. |

Some things just don't freeze well so you end up eating them forever. I have to be really careful with vegetables because leftover cooked veggies can be hard to face. It's even more of a challenge now, because my freezer died on Tuesday. That tri tip probably would have become sandwiches for work and combined with the rice and stuff in the cupboard, a burrito for dinner. I've made Barb's rhubarb custard cake with pineapple instead of rhubarb. What are CRASH potatoes? Susan B. |

The protein shakes are working so far, and I got him to eat an oz. or so of some Cream Havarti cheese this morning. I've just got to figure out what he will eat! I'll try some cottage cheese later today. I figure dairy is better than nothing and cottage cheese is a quality protein. I tried tempting him with some ravioli in marinara this morning (resorting to "treat" foods here!) but it was no go. <sigh> I have some soup frozen in individual portions in the freezer. He did mention yesterday that he might like some chicken soup, but I'll have to make sure it's a puree, not chunky. -- Peace! Om Life isn't about waiting for the storm to pass. Step by step is he http://thepioneerwoman.com/cooking/2...-hot-potatoes/ I add cheese at the very end. BTW the steaming takes a much shorter time than I expected. Dimitri |
