Fruity Muffins
 
A real spring treat!!!!!!!

Ingredients
400g (14oz) plain flour
1tbsp baking powder
150g (5oz) soft light brown sugar
1/2 tsp cinnamon
2 apples, finely chopped
100g (3.5oz) fresh Raspberries
1 egg
50ml (0.1pt) milk
200ml (0.4pt) soured cream
115g (4oz) unsalted butter (melted)

Topping
50g (1.7oz) oat based cereal
50g (1.7oz) demerara sugar

Makes: 12 muffins
Prep: 15 mins
Cook: 25 mins

Mix the topping ingredients together in a small bowl and set aside.

Preheat the oven to 180°C/350°F/Gas 4 and prepare a muffin tin by lining it with paper cases.

In a large bowl mix the flour, baking powder, sugar, and cinnamon together.

In another bowl, beat the milk and egg together lightly and add the melted butter and the sour cream.

Then add the apples and raspberries.

Mix into the bowl of flour and other ingredients until just combined, do not over mix!

Spoon tablespoons of the mixture into the prepared pans and sprinkle the toppings over the muffin mixture.

Bake for 20 minutes until golden, well risen and firm to touch.

Remove from the oven and cool in the tray for 5 minutes then remove from the tray and leave to thoroughly cool on a wire rack.
