Me and my eggplant
 
What do you do with the leftover butt ends after you've taken the prime
slices out of the middle?

You cube the chunks, toss them in an egg wash and bread crumbs, and fry them
until they're just crisp. Then you stir in a mixture of the leftover tomato
sauce (its third appearance) and some sour cream, and bake until hot.

I still don't understand my dear son-in-law, who won't eat used food. It's a
good thing he's the cook in the house.

Me and My Eggplant

You should do a cookbook, or website, or memoir - anything for an
excuse to use that title.
