Mushy broiled flounder?
 
Can someone tell me what could possibly cause broiled flounder to become
"mushy"? It was frozen, thawed out, then broiled. Maybe moisture from
being frozen? Or can cooking it too long result in mushiness? How do you
prevent this?

I have always found that flounder does not freeze well and that the
fleesh goes soft.

Funny, Gorton's finds the fleesh freezes just fine.
