Default PING: Leo Blaisdell re twice-bakeds

"Your" twice-baked potatoes were part of today's home run dinner at
Chateau Schaller, Leo. Thank you!

Seven-year-old Sam loved them and wanted them at snack/suppertime. She
was crushed when told they were history.

I shorted the count when I bought the bakers and bought only four.
That's when I decided to do twice-bakeds (then I'd have 8 pieces for 6
people). I followed your instructions almost faithfully and did the
add-ins this way: about 2/3 of the scooped insides were in one bowl,
the remainder in another. Both portions had some sour cream and half
and half added. The smaller portion got green onions and bacon in half,
bacon and cheese in the other half. The larger portion got green
onions, bacon, and cheese. Four halves were filled with the works, two
halves with the bacon and cheese only, and two halves with the green
onion and bacon only mixture.

I prepared them and set them in the auxiliary fridge on Tuesday
afternoon. Imagine my surprise when I was going to pop them into the
low oven for their 20-minute reheat as you recommended and realized that
the auxiliary fridge had become the auxiliary freezer. Damn! I put them
in at 325 with the roast for about 10-15 minutes, then pulled the roast
and upped the temp to about 375. I put them under the broiler to
finish.

Kind sir, they received rave reviews on *all* fronts and I've promised
Beck your instructions. She's never baked a potato.

Chris' comment was, "I can't believe you went to the work and bother of
accommodating the picky eaters, Mom." At that point, Jamie said, "You
mean me," and Beck intervened with "He could have meant cheeseless Dad."
I just basked in the compliments. '-)
