Does anyone have the recipe for green stuffed olives where you take ou
the pimiento, restuff with ground meat of some kind, dip in something,
roll in crumbs and bake??

I haven't ordered these, but I've ordered the habanero ones in the past
for a Christmas present for my daughter, and have ordered them again
this year. Nothing like a little jar of olives in the Christmas
stocking, and more under the tree!

My mom used to take a pimento stuffed green olive and mold seasoned
ground beef around it. Then she baked em. They were known as "Eagle
Eye" meatballs. Everyone liked them so much that she started putting
a layer of green/pimento olives or salad olives in the meatloaf.
(Cheaper to use salad olives)

try some anchovy stuffed olives:

reese
roland
goya
el faro
ybarra

...the reese brand is found with cocktail mixers and that sort of thing at
my supermarket. tasty little suckers.

Olive ascolane, and really good when handmade. These days almost everybody
buys them frozen and ready to heat in a frying pan, though.

It isn't just any olive, but really big ones partially cured, called alla
salamoia, which are not at all as salty as regular olives. You could back
off all salt in stuffing and breading I think and get closer.

I get them at Smart & Final, and they're very inexpensive and just as good
as Reese's. I don't remember the brand. They're in a can.

the ybarra? i haven't seen them yet, only reese and (i think) roland.
