You can whip it and freeze gobs of it and they aren't bad thawed out.
You can freeze the cream and use it for sauces, but it won't whip well.

Check the expiration date Whipping cream has a very long shelf like.

I bought a quart yesterday @ Costco with a 12/30/08 use by date.

If you freeze it unwhipped it will separate as the fat & liquid have very
different freeze points.

Only if you whip it first. Freeze in "plops" on a lined cookie sheet.
