Well, even if there's only one of you, you could throw them in a
blender with cocoa and milk. Presto! One big "sugar-free" shake. You
can put the leftover amount - blender and all - in the freezer for a
SHORT period if you like - it's more like ice cream that way. (Or just
put the peeled, sliced bananas in the freezer in a simple container -
THEN blend them after they're frozen. Either way, leftovers can be
kept in the fridge.)

I don't have a recipe handy, but you can always freeze them as they
are for later use...

I vote for banana nut bread. Only called for 1 cup of mashed ripe bananas
which is about 2 overripe bananas. This was actually my grandmother's
recipe, my mother and I have both made it successfully:

2 c. flour, sifted
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/2 c. butter
1 c. sugar
2 eggs
1 c. mashed ripe bananas
1/2 c. chopped English walnuts

Blend dry ingredients together. Add chopped nuts. Cream butter and sugar
and blend with a spoon into dry ingredients. Blend in eggs and beat well.
Stir in mashed bananas. Pour mixture into two greased loaf pans. Push the
batter into the corners, leaving center slightly hollow. Bake at 350
degrees for 60-70 minutes until well browned. Cool well before serving.

Make a double batch of this and freeze one loaf:

James Beard's Banana Bread

2 c. sifted all purpose flour
1 tsp. baking soda
1/2 tsp salt
1/2 c. butter
1 c. granulated sugar
2 eggs
1 cup mashed very ripe bananas (about 2-3)
1/2 c. milk
1 tsp. lemon juice or vinegar
1/2 c. chopped nuts
grated orange rind (optional)

Sift first three ingredients together. Cream the butter and gradually
add the sugar. Mix well. Add eggs one at a time, then bananas and mix
thoroughly. Combine milk and lemon juice which will curdle a bit.

Slowly and alternately fold in the flour and milk mixtures, beginning
and ending with the dry ingredients. Mix well after each addition.
Stir in the nuts and rind, then pour the batter into a lavishly buttered
9x5 inch pan and bake in a preheated 350deg. oven for one hour or until
the bread springs back when lightly touched in the center.

This is the second recipe for banana bread in his "Beard on Bread"
cookbook and he comments "This is another banana bread which I find
lighter and perhaps more flavorful than the previous one, although both
are extremely interesting breads."

This is yummy spread with cream cheese--gilding the lily.

Yes, usually when I discover an over ripe banana I don't have time to do
anything with it just yet. Or I only have one banana and it's not enough to
use. I peel them, throw them in a ziploc and stick in the freezer. When I
have time I make something.

I don't even peel them, just toss them in their original container,
banana skin, into the freezer. Take out, defrost on the counter, use in
whatever overripe banana recipe I'm using that day.

If I'm up for it, I'm going to try to make Paula Deen's Mom's Banana Bread
tomorrow. It calls for 6 over-ripe bananas and as luck would have it, guess
how many I have?????? :~)

The only item I don't have to make the bread is sour cream; I'll have to get
some in the morning.

Banana Nut Bread

Recipe By :MindiAnn B. Wuerzburg Germany American Red Cross
Serving Size : 1 Preparation Time :0:00
Categories : Breads

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 cup sugar
2 eggs, well beaten
1 teaspoon lemon juice
1 1/2 cups mashed bananas
1/2 cup broken nuts (pecans or walnuts)

Preheat oven to 350 degrees
Sift together flour, soda, salt. Set aside.
In large bowl cream shortening and sugar. Add eggs an beat well.
Add lemon juice and bananas. Slowly add flour mixture in to banana
mixture until all is blended smooth.
Stir in nuts and blend well.
Bake in greased loaf pan for 1 hour

Broiled Bananas


Slice peeled (some people you JUST have to tell this to) bananas on the
diagonal and place in single layer (edges can be tipped up on each other).
Sprinkle between 1/2 cup and 1 cup of brown sugar over bananas (depends on
how many bananas you use)
Drizzle lime juice over sugar and bananas (use up to 1/2 lime for juice or
3-4 TBSP if out of a bottle)

Place under broiler until sugar starts to melt and bubble. May be eaten as
is with whipped topping or maybe served over ice cream.

For real simplicity: cut the bananas into strips (without the peels.)
Fry together with eggs.
