Buttermilk scones......
 
Got leftover b'milk from the birthday cake, so decided to make these today
and have then for afternoon tea.

First batch is in the oven. Going to do a second batch for some friends
who've just had one of their older friends die on them. They're helping the
family (son) get his personal effects in order, so some fresh baked scones
and maybe a Gin and Tonic or 3 will help them.

Also doing some puff pastry cheese sticks.

Kinda sorta like this......

but I use two sheets of pastry, with parmesan in the middle, put the
other sheet on top, press, then top that with tasty cheddar, press
again, and cut into strips.

Made some for the b'day party last week, and they disappeared, *quick*!!
I didn't even get to have a taste!!

They are served any number of ways. They are good with a good red eye
gravy, with butter and jam, or my personal favorite is with butter and
honey.

They also make a handy dandy sausage sandwich!

Not always. Jam or butter is more the usual thing. Clotted cream is
reserved for Scottish scones ;)

I hear 'clotted', all I hear/see/smell is congealed blood.



Whipped cream is an *entirely* different kettle of fish :-)

I agree for the most part about the honey as I'm not a big honey fan,
(it's really good on biscuits) but the other main use for it is to
drizzle some on a prepared grapefruit half and let it soak in before
scooping the sections out. I learned to eat it that way as a kid at
gramma's house, and still love it that way.

Other uses for honey is in baking or dipping sauces.

I'm not a huge fan of it as a sweetener in drinks like dad is.

Biscuits and gravy is another "animal" and if you make it at home, the
gravy is anything but insipid.

We eat our biscuits with butter and honey (comb honey is out of this
world), butter and jam... can't say we put cream - not even the
clotted type - on them though.

I’ve always loved comb honey, used to have it at home all the time when I

My mother would occasionally bake buttermilk biscuits for company dinners.
When she did, she invariably would also make whipped honey butter to serve
with them.

Well..put it this way. MY Trader Joes here in town (ABQ only has one

nonsense... Biscuits...but a rich biscuit. I think my mother made

Yeah, I think the traditional strawberry shortcakes were made with
biscuits. I never read that anyone used anything else until Sara Lee
invented their poundcake and it became the Sandra Lee way....?

I don't know about fancy tricks like replacing sugar with honey in
recipes or anything, but I make my oatmeal with milk and then sweeten it
with a couple of tablespoons of honey which turns out really good.

Freshly baked biscuits are regular Sunday brunch fare in our house. We
have them with butter and an assortment of jams, honey and maple butter.

During strawberry season my wife often makes biscuits to go with
strawberries and whipped cream. She uses a variation of our regular
biscuit recipe with a little sugar, and butter instead of vegetable
shortening. They are much better than the sponge type cakes often used
for shortcakes.

I'm not from the South and most southern terminology (including what
they call BBQ) is pretty weird, AFAIC.

Backing up even further, I don't make individual shortcakes (or
biscuits). I make one BIG shortcake (which is one helluva biscuit),
split it in half, fill and then cut it into wedges for serving. As an
adult, I prefer using a variation of cream biscuit for the dough
instead of lard, but I still don't *call* it a biscuit. It's
shortcake.

Oh, no. I know exactly what Christine is talking about. My mom's mom
made traditional shortcake with lard. Mom went to the store and
bought those individual sponge cakes with a depression in the center
to hold the berries. I never did like those nasty things.

I do, however, like strawberries over pound cake and especially over
angel food cake - but you'll never catch me calling either one
"strawberry shortcake".
