Online resource - learning the basics
 
Hi, I'm looking for a site(s) where you can learn about the basics.
Cooking styles. Kitchen equipment. That sort of thing. I know of
plenty of recipe sites but am looking for something a bit more basic.
What is braising/how long to cook that cut of pork/what is baking soda/
what happens when you mix X with Y. That sort of stuff.

I just want something to surf to as and when time allows so that I can
build a base knowledge.
