Default cookie recipes for cookie press?

I just bought my first cookie press

I'd love some good recipes for dough for it. (I understand the dough should be
a little bit softer to work with this thing, right?)

[Preparation]

1. To brown the butter, melt butter in a small, heavy saucepan over

low heat. When fully melted, increase heat to medium and cook,

stirring constantly, until the butter turns a medium brown and smells

nutty. Measure out 1 cup to use for cookies and reserve the rest for

the filling. Refrigerate until firm but not solid, about 30 minutes.



2. For cookies, heat oven to 325 degrees. Have ready a cookie press

and ungreased baking sheet(s).



3. Beat the 1 cup brown butter, 1/2 cup of the confectioners' sugar,

vanilla and salt in large bowl of electric mixer until creamy. Add

egg and egg yolks and mix to combine. Stop mixer and add flour; mix

on low speed just until flour disappears.



4. Transfer dough to a cookie press and press onto baking sheet in

desired shapes, spacing them 1 1/2 inches apart. Bake until set, 16

to 18 minutes. Transfer to a wire rack to cool.



5. For filling, cook maple syrup in a heavy 2-quart saucepan over

high heat for 5 minutes. Cool to lukewarm then stir in remaining 1/2

cup confectioners' sugar. Beat the reserved brown butter in a food

processor or a small bowl of electric mixer until light. Add the

syrup mixture and beat until smooth. If mixture is too thick, add a

small amount of milk or cream until it is spreadable.



6. Assemble cookies by spreading about 1/2 teaspoon filling on the

flat side of half the cookies. Sandwich with another cookie.

Preheat oven to 400 F. Cream the butter and shortening together

with the sugars until fluffy. The butter is for flavor and the

shortening adds crispness. The add the egg and vanilla and blend

well. Sift the flour with the soda and salt, then resift. Add to

butter mixture, blending well. Divide dough in half and, using

your finger tips, roll each half into a long roll about 2 inches

in diameter. ( 1 roll may be frozen for future use.) Chill dough

1/2 hr. then cut roll into 1/4-inch slices or press through a

cookie press. Bake on a greased cookie sheet for 8 to 10 mins or

until cookies are golden around edges.



Yield: 5 dozen cookies.



VARIATIONS: 1. Peanut butter - combine 1/2 cup peanut butter with

1/2 cup butter omitting shortening and using 1/2 cup less flour.



2. Chocolate chip - Add 1/2 cup chocolate chips, 1/4 cup chopped

nuts, and 2 Tbs milk.



3. Lemon wafers - add 1 Tbs freshly grated lemon rind and replace

vanilla with lemon extract.



4. Molasses-spice - add 2 Tbs molasses, 1 1/2 tsp more baking

soda, and replace vanilla with 1 tsp each ground ginger, cloves,

and cinnamon.



5. Honey - replace granulated sugar with 1/2 cup honey; add 1/2

cup more flour.



6. Pumpkin - add 1 Tbs pumpkin pie spice.



7. Apple - add 1 Tbs spple pie spice and 1 small apple, peeled,

cored, and chopped.



8. Eggnog - add 1 Tbs rum and 1 tsp grated nutmeg.



9. Fruitcake - add 1 Tbs brandy and 1/2 cup chopped citron and

In a bowl with an electric mixer cream the butter with the sugar

until the mixture is light and fluffy, add the egg and the salt, and

bowl and beat the dough until it is just combined. Transfer half the

dough to a small bowl, stir the cinnamon into 1 of the dough halves,

and stir the cocoa powder into the other half. Transfer each dough to

a large pastry bag fitted with a 1/2 inch plain tip. On lightly

buttered baking sheets pipe 5 dots of either the cinnamon or the

cocoa dough in circles, 1 inch apart, and pipe a dot of the

contrasting dough into the centers, forming flower shapes. Bake the

cookies in batches in the middle of a preheated 350 F. oven for 15 to

18 minutes, or until they are pale golden, transfer them to racks,

and let them cool. Makes about 60 cookies.



My Note: I mixed everything together and used this recipe to make

stars with my cookie press.

Cream butter and sugar. Add eggs. Add extracts.

Sift together flour, baking powder, and salt. Add to mixture. Batter will

be

very stiff.

Use cookie press and bake at 350 degrees F for 8 minutes or until golden

brown.



Personal note: I refrigerate the dough to make it less sticky and

sometimes even refrigerate the cookie sheets between batches to help make

the cookies stick to the sheet instead of melting because the sheet is

hot. Since my press is so old, I have to fuss with it a lot more than with

a new one. These things seem to help.

In a small heavy saucepan heat and stir unsweetened chocolate

melted over hot water in a double boiler. Remove from heat and

cool



slightly. Meanwhile stir together flour, cinnamon, and salt. In a



large mixer bowl beat 1/2 cup shortening and butter with electric



mixer on medium speed until butter is softened. Add the sugar and



brown sugar and beat until fluffy. Dissolve the instant coffee



crystals in the water. Add coffee mixture, melted chocolate and

egg



to butter mixture, beat well. Add flour mixture and beat until

well



mixed. Cover and chill about 1 hour or until easy to handle. Shape



into two 7 inch rolls. Wrap and chill for at least 6 hours or



overnight. Cut into 1/4 inch slices. (Can also skip chilling and

press



through a spritz cookie press) Place on an ungreased cookie



sheet and bake at 350 for 8 or 9 minutes. Remove to wire rack to



cool. In a small heavy saucepan heat and stir semisweet chocolate



pieces and 3 tablespoons shortening over low heat until melted.

Dip



one half of each cookie into chocolate mixture. Place on waxed

paper

In half



[Preparation]

Preheat the oven to 350 degrees.



In a medium bowl, sift the flour twice.



In a large bowl, using an electric mixer set on medium speed,

beat together the butter and sugar until light and fluffy. Beat

in egg, vanilla, nutmeg, and cardamom. Reduce the mixer speed to

low. Gradually beat in the flour just until a firm, but not dry

dough forms.



Spoon half of the dough into a cookie press fitted with a

snowflakd plate. Press cookies, 1 inch apart, onto 2 ungreased

baking sheets. Top each cookie with a cherry half. Fill dough

chamber with remaining dough. Press out cookies, 1 inch apart.



Bake the cookies until barely colored and slightly browned on the

bottom, 10 to 15 minutes. Transfer the baking sheet to a wire

rack to cool. Repeat iwth the remaing dough and cherries.

ready to use. 2. Prepare cookie dough as recipe directs. 3. Fill

cookie press with dough; use a rosette disk. For each cookie, stand

press upright on cold cookie sheet; force out dough to form a circle.

Reverse handle of press slightly to cut off dough. Cookies should be

1 1/2-inches apart. 4. Bake cookies 10 to 12 minutes, or until set

but not browned. Remove to wire rack; cool. 5. Meanwhile, make

COOKIES Cream butter, add powdered sugar and granulated sugar

gradually. Cream well. Add egg yolks one at a time. Beat well

after each addition. Add Vanilla and cocoa.



Sift flour and salt together. Add to creamed mixture. Blend well.



Press through cookie press onto greased cookie sheets. Use star

shaped point. Make cookies about 1 1/2 inch long.



FROSTING: Cream butter, add one half of the sugar gradually. Add

cocoa. Beat well. Add coffee, remaining sugar and vanilla. Beat

until smooth.



COLORED WALNUTS: Dilute green coloring in warm water. Add chopped

walnuts, blend thoroughly. Spread into a shallow pan. Place in a

350 degree oven about 8 minutes to day. Bake at 350 about 15

minutes Cool.



Dip ends of each cookie in Cocoa Frosting, then dip into colored

walnuts.



Makes about 10 dozen.

well combined. 4. With wooden spoon, stir in flour, mixing until well

blended. 5. Fill cookie press with dough. Force dough through ribbon

disk, in 2-inch strips, onto cold cookie sheets. Use sharp paring

knife to cut dough after each strip is formed. Strips should be 11/2

inches apart. 6. Bake cookies 8 to 10 minutes, or just until set but

not browned. Remove to wire rack; cool. 7. Meanwhile, make Glaze:

Melt chocolate and butter over hot, not boiling, water. Mix well;

cool. 8. Dip one end of each cookie in glaze; then dip in nonpareils.

Return to wire rack, to let glaze set.



MAKES 12 DOZEN * Use 2 squares of unsweetened chocolate, melted and

beaten slightly with a little water. Decorate or leave plain.



Bake in a preheated 400 degree oven until the cookies are golden

brown on top and done throughout. Test one. Thin cookies take 5 to 6

minutes; thick ones 8 to 15 minutes. Cool slightly, then remove with

spatula. When cool, store in airtight container.

to form 2-inch wreath shapes. Garnish cookies with almonds and

cherries to resemble Christmas wreath. Bake in 350ºF oven for 10-12

minutes or until edges and bottoms are browned. Remove to racks; let

cool.



Cookies can also be made in plain round shapes. They freeze well in

an airtight container up to one month.

Sift flour with baking powder. Cream butter. Gradually add sugar and

Jello, cream well after each addition. Add egg and vanilla; beat

well. Gradually add flour mixture, mix after each addition until

smooth. Force dough through cookie press onto ungreased baking sheet.

Bake @ 375 about 13-14 min. or until golden brown. Makes 5 doz.

1/2 cup Packed brown sugar

2 tsp Milk

Few drops almond extract

1 3/4 cup All-purpose flour

1 Egg white, lightly beaten

1/2 cup Flaked almonds or pine nuts

1 tsp Sugar



[Preparation]

In a mixing bowl, beat the butter with mixer on medium-high speed for

30 seconds. Add the brown sugar, milk and almond extract. Beat until

combined. Mix in as much of the flour as you can with mixer. Stir in

any remaining flour. Do not chill dough. Pack the dough into a cookie

press fitted with a ribbon plate. Force dough through cookie press

onto ungreased baking sheets, making 2 1/2" ribbons about 1" apart.

Using a pastry brush, brush each cookie with egg white, then sprinkle

with almonds or pine nuts and sugar. Bake in preheated 375 degree

oven for 7-8 minutes or until edges are firm but not brown. Let cool

1 minute on baking sheets. Remove cookies and cool on a rack.

1/2 cup Sugar

1/4 cup Butter, softened

1 Egg yolk

1 tsp Almond extract

1 1/2 cup All purpose flour

1/4 cup Unsweetened cocoa



[Preparation]

Heat oven to 375 degrees.



In a large bowl combine all ingredients except flour and cocoa. Beat

at medium speed until light and fluffy (2-3 minutes). Gradually add

flour and cocoa until well mixed (2-3 minutes). Shape rounded

teaspoonfuls as desired (balls, logs, balls flattened, etc.) or use

cookie press. Place 1" apart on cookie sheets. Bake for 7-9 minutes

or until set. Cool. Decorate with melted chocolate chips, melted

almond bark, nuts, colored sugars, candied fruit, candies, maraschino

cherries, etc.

Beat butter with an electric mixer on medium to high speed for 30

seconds. Add sugar and baking powder. Beat until combined, scraping

sides of bowl occasionally. Beat in egg, vanilla, and almond extract

until combined. Beat in as much flour as you can. Using a wooden

spoon, stir in remaining flour.



Filling press



Do not chill the dough. It will be too firm to force through the

cookie press. Before you fill the cookie press, select the design

plate that you would like to use to shape your cookies. Assemble the

cookie press following the directions that come with the cookie

press. Pack the dough into the cookie press using a rubber spatula or

small metal spoon. Place the top on the cookie press and adjust the

plunger to compress the dough.

Preheat oven to 375 degrees F. Beat the shortening with the sugars

and the peanut butter until well mixed. Beat in the egg and the

water. Gradually beat in the flour, baking soda and salt. Form

cookies on an ungreased baking sheet with a cookie press or roll into

balls and smash flat with a floured fork or fingers. Bake at 375

degrees F for 12 minutes or more until done, usually when the puffed

up cookie has lowered down to level. Before then it is more chewy.

For High Altitude, omit water and add eggs last, mixing well, but not

beating them as at sea level. Raise the temperature to 390 degrees F.

Or use a convection oven at 312 degrees F for 15 minutes works even

better.

In large mixer bowl, beat butter, sugar and salt until creamy. Blend

in egg and vanilla extract. Blend in melted baking bar. Gradually

beat in flour. Place dough in cookie press fitted with desired plate.

Press dough onto ungreased cookie sheets; decorate with Nestle Toll

House semi-sweet chocolate Rainbow Morsels.



Bake 7-9 minutes until set. Let stand 1 minute. Remove from cookie

sheets; cool completely.



Makes about 6 dozen cookies.

coffee mixture, and baking powder to the margarine. Beat till

thoroughly combined, scraping sides of bowl occasionally. Beat or

stir in remaining flour. Force dough through a cookie press onto an

ungreased cookie sheet. Sprinkle with candy sprinkles. Bake in a 400°

oven about 7 minutes or till edges are firm. Remove and cool on a

wire rack. Makes about 80.

Mix and knead as in making bread for 15-20 minutes. The longer it is

kneaded the finer the grain. Cover and chill in fridge for 1 hour

before cutting in shapes. Bake in slow over (300F) 15-20 minutes or

until done. You don't want them to brown on the bottom. They are

supposed to come out nice and white on both top and bottom. These can

be put in cookie press.



**MY NOTE** My Mom always rolled out little balls and then pressed

them down with a fork that had been dipped in icing sugar. The other

way she did them was to roll to dough out and cut them into bars and

then poked fork holes down the length

that you must remember to do it to make sure that you knead them for

[Preparation]

Combine butter, sugar, egg and vanilla in a large bowl with mixer on medium

speed until smooth and fluffy, 4 minutes.

Stir together flour and salt in a small bowl. Add to butter mixture and

beat

on low speed until combined.

To shape cookies: For cookie press, spoon dough into press. Form desired

shapes on ungreased cookie sheets.

For slice and bake cookies: Refrigerate dough, wrapped, 45 minutes. Divide

dough in half. Shape each half on wax paper into 6" long logs. Wrap. Chill

in refrigerator 1 hour or in freezer 30 minutes. Slice cookies 1/8" thick.

Place on ungreased cookie sheets.

Oven to 400 degrees.

Bake cookies, either pressed or sliced for 7-9 minutes, depending on shape

or until set and lightly browned around edges. Tops should not brown. Let

stand on sheet 1 minute. Transfer with metal spatula to wire rack to cool.

Bake for 7-10 minutes or until bottoms are light golden brown.. Cool 1

minute. Remove from cookie sheets.

1. Preheat oven to 375'F.



2. Combine cookie mix, contents of peanut butter packet from Mix and

egg in large bowl. Stir until thoroughly blended. Fill cookie press

with dough. Press desired shapes 2" apart onto ungreased baking

sheets. Bake at 375'F. for 7-9 minutes or until set nut not browned.

Cool 1 minute on baking sheets.



3. Cut each milk chocolate bar into 12 sections by following division

marks on bars.



4. To assemble, carefully remove one cookie from baking sheet. Place

one milk chocolate section on bottom of warm cookie; top with second

cookie. Press together to make sandwich. Repeat with remaining

cookies. Place sandwich cookies on cooling racks until chocolate is

set. Store in airtight container.



Makes 2 1/2 to 3 dozen sandwich cookies.



TIP: For best appearance, use cookie press plates that give solid

THIS CAME FROM PILLSBURY MMM COOKIES COOK BOOK Heat oven to 375. In

shapes 2 inches apart on ungreased cookie sheet. Bake 6 to 10 minutes

or until light golden brown. Cool 2 to 3 min. Remove from cookie

sheets. NOTE: refrigerate dough for easier handling. NOTE #2: I have

used lemon, spice, devil's food, and pineapple cake mixes with very

good results. NOTE #3: With the white , lemon, and pineapple mixes,

decorate with cut up cherr ies, and/or sprinkle with red and green

sugar. With the spice and chocolate mixes, add a almond or half of

walnut or pecan to the top of the cookies. These cookies are very

Refrigerate several large ungreased cookie sheets until ready to use.

at medium speed, or wooden spoon, beat soft butter, sugar, egg yolk

and vanilla until smooth and fluffy.



Using a wooden spoon, stir in one third flour mixture at a time,

beating until smooth and well combined. Fill cookie press with dough.

Then make the following shapes. If dough is warm, refrigerate it, but

keep it pliable. It will be crumbly if too cold.



Preheat oven to 375~. Make wreaths: use star disk. Force dough onto

cold cookie sheet in a 12-inch strip, cut strip into three parts.

Form each part into a circle. Continue forming wreaths. Decorate with

cinnamon candies and angelica or candied cherries.



For Christmas trees, rosettes or stars: use appropriate disk. For

each, stand press upright on cold cookie sheet. Force out dough to

form shape. Release pressure; lift up slightly to cut off dough.

Cookies hsould ge 1-1/2 inches apart. Sprinkle with nonpareils,

colored sugar and silver dragees.



Sugar bars: use a striped-bar disk. Force dough onto cold cookie

sheet in a 12-inch strip; cut strip into four 3-inch bars; place 1

inch apart. Continue forming bars. Sprinkle with colored sugar.



Bake cookies 8-10 minutes or until light golden. Remove to wire rack;

cool.

Thoroughly cream butter or margarine and sugar. Add egg, vanilla and

almond extract; beat well. Sift together flour and baking powder; add

gradually to creamed mixture, mixing to a smooth dough. Do not chill.



Force dough through cookie press onto ungreased cookie sheet.

Sprinkle with colored sugar, if desired. Bake in hot oven (400ºF)

about 7-8 minutes. Cool.



Makes about 5 dozen.

If desired, sprinkle with colored sugars or with ground almonds dyed red or

green with food coloring.

2 tsp vanilla

1/4 cup evaporated milk

3 cup flour



[Preparation]

We made tons of these. Used an icing tip to pipe green wreaths, decorated

them

with red-hot cinnamon drops. Made ropes of white and twirled with ropes of

red

to make candy canes. Made every shape and color in the book. These are

"the"

christmas cookie to me.



Preheat oven to 400 F.



Mix together the butter and sugar until light and fluffy. Add the egg,

vanilla,

and milk, mixing thoroughly. Stir in the flour, mixing well.

Divide dough and color with food gels or drops.



Fill the cookie press with the dough and form cookies on a cold and

ungreased

cookie sheet. Bake on an oven rack slightly above the center of the oven

for

about 8 minutes or until light brown. Remove from cookie pan at once.



Yields about 5 dozen cookies.



Helpful Hints: When making pressed cookies, hold the press upright, and

force

out the dough until it appears at the edge of the mold--then lift the press

away. The dough should be pliable. If too warm, chill dough slightly. (It

will

crumble if it is too cold.)

Knead dough with hands until it is soft and pliable.



Press dough through cookie press onto ungreased cookie sheet.

Decorate with colored sugar or small candies.



Bake in preheated 400 degree oven about 8 minutes.



Makes approx. 6 dozen, depending on tip used.

3/4 cup butter or margarine

1 egg yolk

1 3/4 cups all-purpose flour



[Preparation]

Beat margarine or butter in a large mixer bowl with an electric mixer on

medium to high speed for 30 seconds. Add sugar and baking powder and beat

till combined. Add egg yolk, vanilla, and almond extract and

beat until combined. Beat in as much of the flour as you can with the

mixer.

Stir in any remaining flour with a wooden spoon.

If desired, tint dough with food coloring.

Force the dough through a cookie press onto an ungreased cool cookie sheet.

Bake in a 400 oven for 7 to 8 minutes or until done. Remove and cool.



Chocolate-Mint Sandwiches: Prepare dough as directed except add 1/4 cup

unsweetened cocoa powder

with the flour. Force dough through a cookie press using a bar template,

making each cookie about 2 inches long. Hold the cookie press at a

45-degree

angle.

Bake in a 400 oven for 6 minutes. Cool on rack.

For the filling: Heat 1 cup semisweet mint-flavored chocolate pieces and 2

teaspoons shortening until chocolate is melted. Spread half the cookies,

flat side up, with about 1 teaspoon filling each. Top with

the remaining cookies, flat side down. Drizzle the tops of cookies with

green Cookie Frosting (below).

Makes about 48.

Lemon Drops: Prepare dough as directed except substitute lemon extract for

the almond extract and color cookies with yellow food coloring.

Force dough through a cookie press using a swirl star template.

Bake as directed.

For glaze: Stir together 1 cup sifted powdered sugar, 10 drops lemon

extract, and enough milk to make of drizzling consistency. Set aside.

Dip half of each cookie in the lemon glaze and sprinkle with poppy seed.

Makes about 75.

Peppermint-Filled Christmas Trees: Prepare dough as direct EXCEPT color

dough with green food coloring. Force dough through a cookie press using a

tree template. Bake as directed.

For filling: Combine 1 cup sifted powdered sugar, 2 tablespoons

softened margarine or butter, 1/2 teaspoon vanilla, and 2 tablespoons

finely

crushed peppermint sticks. Stir in enough milk (2 to 3 tablespoons) to

make

of spreading consistency. Spread 1 teaspoon filling each on

the flat side of half of the cookies. Top with the remaining cookies, flat

side down.

Makes about 36.

Candy Cane Cookies: Prepare dough as directed EXCEPT reduce flour to 1 1/2

cups and stir in 1/4 cup ground hazelnuts (filberts) with the flour.

Using a pastry bag fitted with a wide tip, pipe 2-inch-long candy cane

shapes on an ungreased coolie sheet. Bake as directed. Cool on cookie

sheet

about 1 minute. Remove and cool completely.

Drizzle with pink cookie frosting.

Makes 36.

Cookie Frosting: Combine 1 cup sifted powdered sugar with enough milk (1 to

2 tablespoons) to make frosting of spreading or piping consistency.

If desired, stir in a few drops food coloring.

Makes about 1/2 cup.







NOTES : For easy passage through the cookie press, do not chill any Spritz

dough. Hold the cookie press upright over the cookie sheet EXCEPT

when making bars.

and red cinnamon hearts.



5. Bake 5 to 6 minutes until bottoms of cookies are just barely

browned. Cool on cookie sheet(s) 2 to 3 minutes before removing to

wire racks to cool completely. Store airtight up to 2 weeks or freeze.

and make small ball if you do not have press. Putting flour on your

hands, this keeps dough from sticking. Press down with fingers on top

of each cookie.



4 Bake at 350 degrees F (175 degrees C) for 20 minutes.

Preheat oven to 300F. Using an electric mixer, beat the butter until

very fluffy. Slowly add the icing sugar and continue to beat until

light and fluffy. Sift together the flour and cornstarch. Add the dry

ingredients very gradually to the creamed mixture, beating

constantly. Drop by small spoonfuls onto ungreased baking sheets and

press each cookie slightly with the floured tines of a fork, or put

the dough through a cookie press. Decorate the cookies with bits of

cherry, coloured sugar and candies, if desired. Bake for 30 minutes

or until set. Do not let the cookies brown on top. Yield 4 dozen

cookies.

12 oz white baking chocolate -- chopped

2/3 cup assorted nonpareils



[Preparation]

Heat oven to 375º.

Beat butter in medium bowl until creamy. Beat in egg.

Add sugar, flour, salt and vanilla on low speed. Beat until well blended.

Put dough into cookie press fitted with 1" sawtooth ribbon disk. Press into

long strips on ungreased baking sheets. With floured knife, score strips

every 2".

Bake for 6 minutes, until just browning around edges. cut cookies along

score lines. Cool on rack.

Melt chocolate in small cup over simmering water, or microwave on high 2

minutes. Stir until smooth.

Spread 1/2 teaspoon on underside of cookies. Top with another cookie, flat

sides together. Repeat with remaining cookies. Refrigerate 5 minutes to

set.

Place nonpareils in dish. Dip 1/2" of end of cookie in remaining chocolate,

then in nonpareils.

Place on waxed paper. Refrigerate to set.
