How long to store cooked frozen vegetables?
I make about 6 different frozen veggies for my family for the week esp
for our 1 yr old son to take to daycare. Frozen Broccoli, frozen spinach, frozen peas, frozen carrots, etc. etc. I nuke about half a bag of each vegetable and then store all of them in a big plastic container mixing in some butter while they are still warm. Lasts the week. Is it OK to keep / store cooked frozen veggies in the fridge this long? (5-6 days) Or do they start to lose their nutrients and go bad after X number of days? We're not getting sick so I know they must not get _that_ bad. I am just more concerned about them losing their nutrients/calcium, etc. Thanks paul |

I > am just more concerned about them losing their nutrients/calcium, > etc. Calcium is a mineral and probably isn't lost, but the vitamins start to diminish right away, and I would say you're losing the nutritional value you gain by using frozen instead of canned when you do things this way. (Frozen veggies are frozen at their peak, and are often more nutritious even than fresh veggies that have been around a while.) Serene |
