Good recipe for leftover chicken or ham
 
I had some leftover chicken and found this in my ancient _Joy of Cooking_
(favorite cookbook!).

Prepare a cup and a half of noodles. I used whole wheat broad noodles.
Put in greased casserole. Add your cubed cooked ham or chicken and mix.

Mix a cup and a half of milk (I used skim), 1/4 tsp paprika, 1/4 tsp
salt, and one or two eggs.

Pour over noodles. Make sure the noodles are below the liquid level
unless you enjoy crisp baked noodles. Add some bread crumbs if you wish.

Bake 45 minutes at 350. Good for two not-very-big meals.

You can add shredded cheese, lightly cooked green pepper pieces, and/or
mushrooms. Use your imagination!

Quick and easy prep. I liked it. You may too.

I made something very similar just the other night! Wasn't leftover
chicken, just a couple of boneless chicken thighs which I simmered in a
little water until tender and then chopped up. I tossed in some cheddar
cheese and lightly cooked frozen broccoli florets. I put buttered seasoned
breadcrumbs on the top and baked it. Very tasty :) I still have meals 3 &
4 to get out of this since I'm cooking for one; that's fine with me!

A good idea, I think. I'd add a bit of roux, always kept on hand, with the
seasonings to make a béchamel sauce, with or without the eggs, in the
microwave before adding it to the noodles. I'm going to try it with my
leftover cured pork shoulder.

I discovered yesterday that, in my opinion, this does not reheat well.
Take that into consideration if you try it.
