Tomato Olive Fritatta
6 large eggs,1 tbs.flour,1/2 tsp.black pepper,1/4 tsp.salt,2 cups cheddar or
Monterey Jack,shredded,1 can(3.8 oz.)black olive slices drained,1/2 cup green onion,thinly sliced,1/2 cup chopped tomato,1/3 cup bacon,thin strips,1 1/2 tsp.Itlalian herb seasonong. Preheat oven to 350.In medium bowl,whisk one egg with flour until blended.Whisk in 5 eggs,pepper and salt.Stir in remaining ingredients.Spread in oiled 7x11 inch rectangular pan.Bake 35-40 minutes or until golden.Makes 6 servings.
