Thanks Sanci, I should have been more specific.

No cool whip, no sweetened condensed milk etc I want a scratch recipe

XX pineaple
XX coconut shredded
XX coconut milk (if needed)
XX flour or cornstarch to thicken
etc.

(Assume I can do a crust from scratch but specify what kind.)
