Ginny, that's a lovely thought, and not the least bit offensive. Bob
thinks the idea is great, although he said, "As long as it's a VIRTUAL
cook-along." That means that we don't need food at present -- friends
and family have been keeping us well supplied -- but the idea of reading
about "what we would send if we could, what we think of him and that we
love him" is very thoughtful. Please go ahead with it on a virtual level
-- Bob will be thrilled to hear about the virtual foods. You're very
kind to suggest it.

I didn't get a response from Chatty Cathy about the rfc website and if she
would be able to cover it, so I took Barb up on her kind offer of posting on
her jamlady eboard. Bob and Carol read that, so they would have access to
what we write and the pictures we send. I cut and pasted the instructions
on how to get the info to Barb from one of her earlier postings:

"I'm ready to offer my jamlady.eboard.com website to post the pictures
and our words. Unless someone's got a better idea, when you make your
dish, take a picture or two (not too many, please) and size them down to
no more than maybe 150kb (is that reasonable) and send them to me along
with the telling of whatever you're wanting to tell. Send them to my
name (without anything between my first and last names) at mac.com.
If somebody's got another or a better idea, that's okay, too."


So, Bob's waiting and is salivating in virtual time to both see what you
cooked and to know what you have to say about it and him. I'd say he's
dying to read it, but you know....sort of in poor taste donchaknow.

Soooo, man the torpedos, full speed ahead, this cookalong is started. I
sent in a report on tuna noodle salad (no comments, okay, it has staying
power).....we'll keep cooking until Bob or the Man Up Stairs has other
plans.

Well, I was thinking of making scallops but I could not find
stingray *anywhere* ... darn.

(laugh) Hmmm. What could I make that would be Bob worthy.
If memory serves, I think Bob likes a good steak, so that's what
it will be. Or that Jersey invention, Italian hot dog?

Well, actually I did respond ginny... maybe your news server skipped my
post or maybe you have me KF'd <veg>


(Please remember that I am 7 or 8 hours ahead of the USA so I was asleep
when you Ping-ed me and only replied a few hours later). But this is
what I said:

I have considered this. But... I am a "newbie" around here (only been
participating in r.f.c. for a couple of years) so I haven't had the
privilege of knowing most of the people you mentioned. However, if you
(or any of the other long standing members of r.f.c) would like to
compile a list, I am sure I can do something.

I would need their nicknames, the date they passed on (the year will do)
and maybe a little bit of a bio. on them?

I'll have to get to the store to get the ingredients for my squash
casserole. Won't be today, though. Also I promised you I'd make that
copycat recipe for Cracker Barrel's Hash Brown Casserole. I don't have the
ingredients for either one on hand at the moment.

Yes, that's one thought, but I'm also thinking of making something
either prettier or more elaborate, because that gives me joy, and
might potentially give Bob and Carol joy. This may be his last

On ABF, we're talking about a cook-along for paella or bouillabaise
(cioppino even). Can Bob have anything like that?

I'm thinking Bob can have anything he wants. When my mom was diagnosed with
plaque clots in her carotid artery which might have gone to her brain and
caused a stroke (thankfully didn't) they put her on a "diet" which was
mostly bland boiled chicken and plain vegetables. And she said to me,
"Dammit, I'll eat any damn thing that I please. I'm not going to die eating
boring food!" Well, she's still with us as lively as ever at age 82.
She-crab soup? They said no, too fatty! She said, "You betcha! Give me a
bowl of that!" Methinks Bob should enjoy whatever he likes.

I haven't yet made the copycat Hashbrown Casserole

1 lb. frozen hash browned potatoes
1 large onion
salt and pepper to taste
2 pounds colby cheese, shredded
10 oz. can cream of chicken soup

Place frozen hash browns in a lightly greased shallow baking dish. Add
grated Colby cheese, finely diced onion, one can of soup, salt & pepper.
Bake at 350F for about 45 minutes.

Bob should love this! LOL

And I am going to fix a pot roast. Probably tomorrow, as I won't
have much time for it today. Not sure if I am going to do my
wonderful On and Off again pot roast from Margaret Fox who was the
noted chef from Cafe Beaujolais in Mendocino, or a Yankee type pot
roast.
But some sort of pot roast it will be.

Have you ever had Cracker Barrel's Hash brown casserole? It's mostly
cheese! Should have specified a 2 lb. bag and a crock pot. The idea is to
roast him, er, I think that's the idea.

My father is on his 2nd round of chemo; lymphoma survivor, dontcha know.

Bob is not actually *eating* with us, Om. This is a Virtual cook-a-long.
Bob is enjoying this vicariously by things read to him by his wife, Carol.

I made a nice breakfast which Bob might have enjoyed this morning. A nice 3
egg omelet stuffed with cream cheese and crispy crumbled bacon. Sorry, no
photos. I was too hungry and wasn't about to let it get cold while I
snapped photos! Omelets (heheh) get cold too fast.

I'd call 'em a heart-attack-on-a-plate. The recipe I've seen calls for
8oz. of cream cheese and 1/4 lb. of butter along with the soup as a
sauce.

I'm thinkin' comfort food, something that makes me think of my mother
and one of the few dishes she did really well: southern fried chicken.
This isn't her recipe, it's even better. Crispy as all get out.

Buttermilk Fried Chicken

meats and poultry

1 whole chicken; cut into 8 pieces
1 1/2 cup buttermilk
2 cups all purpose flour
3 - 4 cups vegetable shortening

Place chicken pieces in a gallon-sized zipper-lock bag. Mix buttermilk
with 1 teaspoon salt and 1/2 teaspoon pepper. Pour mixture over
chicken; seal bag, then refrigerate for at least 2 hours and up to 24
hours. Meausre flour, 1 teaspoon salt and 1/2 teaspoon pepper into a
large double brown paper bag; shake to combine. Drop half of chicken
pieces into flour mixture and shake thorooughly to completely coat
with flour. Remove chicken from bag, shaking excess flour from each
piece. Place coated chicken pieces on a large wire rack set over a
jelly roll pan until ready to fry. Repeat coating with remaining
chicken pieces.

Meanwhile, spoon enough shortening to measure 1/2 inch deep into a 12
inch skillet; heat to 350°F. Place chicken pieces, skin side down,
into hot oil, cover with lid or cookie sheet and cook for 5 mins. Lift
chicken pieces with tongs to make sure chicken is frying evenly;
rearrange if some pieces are browning faster than others. Cover again
and continue cooking until chicken pieces are evenly browned, about 5
mins. longer. (Be sure oil continues to bubble; oil temperatures at
this point should be between 250°F and 300°F and should be maintained
at this level until chicken is done.) Turn chicken over with tongs and
cook uncovered until chicken is browned all over, 10 to 12 mins.

I'm making Fryla. It's a potato, 2 kinds of cheese, green chile soup,
a nice thick soup, named after the Yuma AZ fireman that created it.
Our firemen friends in Yuma were nice enough to share it with us.

My Son In Law calls it cactus soup because the little green chiles in
it look like cactus to him. Sometimes I make it with both.

I'm with you Andy. The can of soup would turn me away. My SIL went
through a period of making something similar for every event that was
topped with cornflakes. Luckily she burned out on it.

How's it turn out ?
Sounds alot simpler than cranking up the oven....

No picture, but D and I had pork chops tonight. I pan seared them and
finished them in the oven. I set a relish of smoked/roasted jalapeño
and minced lemon confit and fresh rosemary and minced garlic on the
chops when they were about 10 minutes away from being done. I topped
that with slices of semi aged goat cheese and let the chops finish
roasting. When they were done, I removed the chops and drained off
most of the fat and poured a bottle of hard apple cider into the
skillet. I reduced it to a thin syrup and set the chops back in,
basting them a few times with the reduction.

Sides were field peas cooked with caramelized onions and thyme, and
turnip greens.

I want somebody to cook that for me... Knowing the lack of culinary skills
in this house, probably have to do it myself. Funner that way anyhow.
