Storing pork/bacon fat
 
My new favorite breakfast is pasta ala carbonara, and so I have this
jar of bacon and panchetta drippings sitting around. SHould it be
refrigerated or frozen or can I just leave it on the counter?

Way back when we used to use it frequently it just got put into a jar
on the counter. It came and went fast enough that it never went
rancid.

Now that we can't eat like that anymore it goes into the fridge in a
tightly sealed jar since it may be a long time before it gets used.
Most of the time though the dog gets it, nowadays.
