How early can I buy my prime rib?
 
My local supermarket has bone-in prime rib roasts for $5.99/lb. The
local butcher is asking $11/lb !

I wanted to buy 2 smaller (3-4 lb) roasts instead of one huge roast.
How early can I buy them and keep them in the fridge, if I plan to
cook them on Christmas?

I'm worried they'll sell out, and they won't "reserve" them.

Buy them now. They will be in your refrigerator rather than the
store's, nothing wrong with that.

Buy the roast within the next couple of days. Also, you can buy that
one large roast and ask the store meat department to cut it in half for
you.

According to Alton,

A prime rib roast is USDA Prime. Anything else is a standing rib roast.
Prime rib roast will cost way more than $11/lb.

If you come up with a Prime rib roast, I'll cast out the family and make my
home available to you and yours. You can even have their presents!

OK. Buy the roast. Put it in a big ziploc bag, and squeeze out as much of
the air as possible. Put the thing into a mixing bowl, and stick it on the
bottom shelf of your refrigerator, all the way in the back. That should be
the coldest spot in the refrigerator. The idea is to keep it just slightly
above freezing. Put your refrigerator thermometer in the bowl, if you're
curious. If you don't have one, buy one when you go to get the roast.

Brown's method:

Place dry towels loosely on top of the roast. This will help to draw moisture away from the meat. Place into a refrigerator at approximately 50 to 60 percent humidity and between 34 and 38 degrees F. You can measure both with a refrigerator thermometer. Change the towels daily for 3 days.

Christmas Eve/Day is only 5/6 days away. The roasts put out a few days
from now won't be any fresher, they'll all be from the same shipment of
cryo. Buy now, and season now to allow fragrance from evaporating
volatile oils to penetrate (Penzeys English Prime Rib Rub is excellent,
I just add lots of extra cracked black pepper)... place on rack in
roasting pan, meat draped with clean plastic with opening at bottom and
leave in fridge (your fridge is just as good at the one in the store,
probably better). When it's time all you gotta do is put it into the
oven (remove plastic naturally). Buy the largest roast you can use, do
not have it cut in two... the larger the roast the better it cooks up
(cold rib roast is excellent, so are the bones re-roasted). Do not buy
extra to freeze, never freeze prime rib, or any other tender cuts...
then you're just wasting your money... if you live in the US there will
be tender beef available 24/7, and always a cut or three on sale.

If you have confidence in your local butcher, support them!

If your local butcher has "USDA Prime" standing rib roast, buy that.
The butcher's is a bargain. If the supermarket or butchers beef
is less than USDA Prime (Choice, Select, ...) buy the best marbled.

I doubt "Prime Rib" has much to do with USDA Prime.
Prime rib was eaten in England before the USDA, or the USA. IMO.
But now, USDA Prime is as rare as a local butcher.

My local butcher went out of business. A month later, I found him working in
the meat department of our biggest grocery chain, Wegman's. Fortunately, he
hasn't forgotten anything. I can still get great advice from him when I have
some strange recipe in mind.

Wegmans is a good place, and they do have USDA Prime, in the larger
stores, at top prices. I do find that even in my small, local Wegmans
that the meat department can be helpful.
On the other hand, I think their "normal" meat is overpriced,
and with the vacuum packaging they push, over packaged.

There is a lot to like. Really, thinking about it, there is less
packaging, no foam tray, or blood diaper.

Have you seen Hormel pork tenderloin packaging? Or other thick plastic
vacuum packs? It's "cryovac"ed but in small sizes, not a whole beef
tenderloin: a filet mignon.
A gold foil effect on the label side, the meat is tightly vacuum
formed to the cut. As packaging, it is superior. If you are going to
store it, or if the store has to move it around, probably better.

I never saw a strip steak, or anything else sold side to side for a
comparison. What I see is a lot of strange, small cuts of meat,
at what seems to be high prices.

Wegmans is very good, but there is better meat locally, even in other
supermarkets. Unless you want USDA Prime, it's one of the few places in
Syracuse that have it consistently

I don't think I've seen this type packaging for smaller cuts other than
filet mignon. I'll have to keep my eyes open for it now.

Wegman's is good at fine tuning the selection at various stores. I shop at
three different stores, depending on where other errands take me, and the
meat selection is slightly different at each one. Other products, too. This
makes perfect sense.

Empire Blvd in Webster near Bay. A white-haired guy named Bob DeBurr. He
used to own DeBurr's Market on Merchant's Road. I've never tried Skip's,
although I know people who rave about the place.

I recently found a new butcher. Actually, I had known about the
place for years but never tried it out. I did go a few months ago
and discovered that he has strange hours. I was out on my bike a
few weeks ago and went by the place so I went in and got some
stuff. I was not impressed with his selection but his prices were
great. His bacon is about $2 cheaper than the stuff I get in the
grocery store and it is infinitely better. The other day my wife
was there and bought 3 nice thick NY strip steaks for $9. I don't
usually like NY strips, but they were great. I will be doing a
lot more shopping there.

Thanks! I've got a question about a cut of meat that Skips hasn't been
able to help me with. Maybe I'll have to take the drive out there.

I heartily endorse Skips. The meat is very good quality, they make an
excellent breakfast sausage and the prices rock! (Whole tenderloins,
cyro packed for $6.99/lb and they'll cut them into steaks for free)
They also make their own Italian sausage, although I prefer Rubino's
for that. If you sign up for email, you get coupons too. I go to the
one in Henrietta, can't speak for the one on Ridge.

Weg's carries a brand of Italian sausage whose name I forget, but it's made
in Syracuse. Check the label. Good stuff.

Gianelli's...yup it's good. But, Rubino's fennel sausage is REALLY
good. Seasonings = salt, pepper and fennel...that's it. I make my
Mom's sausage and mushrooms with it. YUM!

Use this as an opportunity to meet your Meat guy, ask him the question,
Tell him what you want and when. All my supermarket meat guy needs is 3
days to get my request in the timeframe I need it in. The Butcher shop guy
needs a full week from his supplier to coordinate delivery times. BTW Prime
Rib does not necessarily mean it is a Prime cut. The Super Market is most
likely Choice Prime rib and the Butcher shop is a Prime Prime rib. I
suspect that is the huge difference in price If both are the price for say
a Choice grade ( the most common found in Supermarkets) I would go find
another Butcher shop.

I opted for fresh ham, bought it yesterday will keep just fine in my
fridge until I roast it for Christmas Eve dinner. I already have it in
the roasting pan all seasoned and ready for the oven... just keep it in
the fridge well wrapped in plastic. And I did much better than you
price wise, got 11 pounds for $18.00.
