This weeks cheap protein storage...
 
At $.67 per lb., we bought 5 extra turkeys, various weights. The birds
ran under $10.00 each. I roasted the smallest one on Teusday and we
finished it up on Saturday.

Meanwhile, starting last weekend, I cut up the other 4 and separately
froze the wings, thighs and legs for future meals (so that's 12 entrees
right there) and then de-boned the breast meat.

I got around 12 lbs. of breast meat and added that to 12 lbs. of pork
plus some spices and made 24 lbs. of sausage. I posted that series last
week. ;-)

I've used the backs, necks, giblets and breastbones to make stock and
have made one pot every other day last week. I still have one to go as I
saved the necks from all 5 birds for a separate pot. That one I intend
to debone and save the meat. The others, I pressure cooked them long
enough to make the bones crushable and since I did not include any long
bones in the stock, the resulting solids got fed to the dogs, much to
their delight.

Total yield will be slightly over 1.5 gallons of very rich stock.
That will be used to make rice and soups over the next couple of months.

All in all, (including the price of the pork), a very good yield of
several cheap and healthy servings for under $50.00.

Plus it's been fun. Dad really enjoyed helping me do the sausage
stuffing...
