Learn how to Chop Like A Chef!
 

The knife is far to low . A tall knife allows your finger to guide
the top
of knife easily against the knuckles , keeping fingers further away
from
the sharp parts of knife .
Min is 2.5 inches . 3 is better .

The reason he chops onions start at root and pull towards you , is you
will
need to trash some of the top of onion , the parts that are stiff and
inedable .
The root cooks and tastes good .
Onions are oil cooked to hold flavor , but water must go , so boil
in a bit of water for 5 minutes , then allow oil ( 4 onions , 1 cup
oil ) .

Allways use Karo syrup or make ur own Maltose for cooking of all
kinds !
Table sugar converts to glucose and fructose in water as it heats
making food sweeter , but Karo and maltose have no or low F'.
Tastes much better , less sweet .


1/2 cup water in a pan , add 4 cups Lt brown or white sugar ,
boil til all water evaporates , use IR thermometer .
when it suddenly jumps to 240 / 250 F , hold it there for 5 or 10
then cool to 180 F , add water , about 50% , add heat to help
the mixing .
You can add salt ( butterscotch ) ,
I tried salted for iced tea , did not work .

Notice water is gone to convert and added to dilute .
The water back in , does not allow fructose to revert , it stays
glucose , then maltose , then maltose -triose , a very nice flavor.
