Default soup de jour

I wanted to make a bean and sausage soup. But my bean and sausage soup
recipe has spinach....So I tried out a small head of cabbage instead.

Tastes good.

1 ring (appox 1 lb) kiebassa suasage coarse ground... peel, cut in coins,
coins cut in fourths.
2 cans navy beans.
1 can diced tomatoes...italian herb type.
1 celery heart with leaves, chopped.
1/2 red onion & 1/2 sweet onion chopped.
2 carrots diced.
1 bulb fenel.
2 cloves garlic. (don't need much because of the garlic sausage)
dill weed and fennel fronds, chopped fine.
1 small head cabbage, shredded.
4 boxes chicken broth (900ml boxes).
8 cups water.
turkey stock boulion paste.
1 tbs crushed red pepper.
2 cups (aqpprox) brown button mushrooms chopped.
2 good squirts maggi sauce.
1/2 tsp salt
1 tsp ground black pepper.
2 cups sour cream.

Sautee the veggies in a little oil. Add them to soup pot.
Pour in the liquids, garlic cloves, crushed peppers, and maggi sauce;
turn stove to medium low. Add the canned tomatoes and beans...bring to a
simmer. Brown cut up sausage while soup is coming to a simmer. Add
browned sausage. Let simmer a hour or so. Stir in sour cream reduce heat
to low to allow sour cream to blend in. Adjust taste by adding salt and
pepper. Serve and package excess for freezer, for future lunches.

Makes approx 4 gallons or so.
