Yes it can be frozen. (I got half a can in my deep freezer.) The
texture is a little weird when you thaw it, but that goes away when it's
melted.

It will last a long time in the fridge, but eventually it will mold.
It'll last forever in the freezer.

Actually it is pretty good for cooking with. I use it when I make a
Mexican hotdish. (layers of corn tortillas, refried beans, cheese,
seasoned ground meat, and enchilada sauce) You can also use it to make
a decent cheese soup (thin with chicken broth, add finely chopped
broccoli, (etc), top with a little grated real cheese)

The cheddar flavor is more useful than the nacho flavored (you can
always add peppers)
