There is a rec.food.preserving group I think - did you try there?
Also, you can post requests for recipes to rec.food.recipes.

If I were you, I would suck up to Barbara Schaller, Melba's Jammin'
for help.

She is the Queen of Jams of all the rfc people who make jams, jellies,
preserves and butters and her stuff is simply irresistible, as her
many blue ribbons and other awards will attest to.

Buy a box of Certo (or Sure·Jell) pectin and inside will be a sheet of
paper folded many times with lots of recipes. There should be one for
cooked cherry jam. Use that and don't grind up the cherries too fine,
just crush them. HTH :-)

The yield with cherry jam or jelly is not very high because cherries are
very low in natural pectin.

No, Dear Libido Incognito, I was only telling the poster where he can
get some useful information. Have you ever tasted something Barbara
made? It tastes as if someone who really cares, made it for you.

I've only experienced the sharper side of Bab's tongue...And then only
when I mentioned the 'B' word...Beets....Are you saying Barb made you
some jam in the past and if you continue with the complements she might
make you more?

Good Planning, she won't she thru that.

Mr L. I., you are so funny. I do not have to compliment her if I want
more of her delicious jams and jellies, I BUY them from her when I
need some more. Sure, at times I have to wait until she makes more,
but the wait is worth the while. )

I LOVE cherry preserves, but fail to imagine the charm of cherry
marmalade - do the skins get candi-fied, like in orange marmalade? If
not, then they would be really, really annoying. I'd stick with
preserves myself.

I suspect the OP is looking for a recipe that includes both cherries and
citrus fruit/peels. I have made cranberry marmalade and blueberry marmalade
and that's what they are -- the first is kind of a mix between cranberry jam
and orange marmalade and the second is blueberry jam and orange/lemon
marmalade. The blueberry marmalade recipe is especially yummy; I thought
the cranberry marmalade recipe was too sweet -- anything craberry should
have some tartness in my book.

I think I've seen a recipe for cherry marmalade. If I get the chance I'll
look for it.

I assumed "Uncle Ned" was just using the wrong word when he said marmalade.

Here's a berry and lemon jam that I've made before using blueberries and
it's quite good. I think you could use cherries and thinly sliced
lemons and end up with something kind of marmalade-like. The lemons
provide the pectin. (Yes, you use the whole peels, not just the zest)

Blackberry Lemon Jam
(from _Farm Journal_)

2 lemons, seeded and chopped
1 1/2 cup water
6 cups blackberries
7 cups sugar

Combine lemons and water and cook for 20 minutes. Add berries and sugar
and continue cooking 20 minutes or until thickened. Pour into sterile
jars, leaving 1/4€¯ headspace, seal, process in BWB canner for 5 minutes.

Googled it...

http://www.vernalisa.addr.com/canning31.html

Cherry Marmalade

2/3 cup chopped and seeded orange,
about 1 large
1 quart pitted sweet cherries
3 1/2 cups sugar
1/2 cup lemon juice

Combine all ingredients in a large pan; stir until sugar dissolves. Bring to
a boil over high heat, stirring constantly. Cook rapidly almost to gelling
point.
Remove from heat; skim off any foam if necessary.
Ladle into hot jars, leaving 1/4 inch head space.
Seal and process in boiling water canner for 15 minutes.

Happy Canning..........Chefbetty

Define "Cherry Marmalade." To me, it is an anomaly since I consider
marmalades to be citrus and only-citrus products.

Proper decorum dictates that you do not tell others about a gift you
received, if you are not certain that the others received the same
present from that donor.

Thus, knowing how foolish the young are, I tried to protect you. What
do you think would have happened if I would have told Mr. L. I. that I
do not have to compliment you, that you will send me all the free jams
and jellies and butters and preserves, if I ask you to do so?

This is not so, of course. While I get an occasional generous gift of
your jams and jellies, I do not ask for more. I might hint, but that
is another story. It is much more convenient to find out whether
there are some extra jars available and buy them. They have become my
hostess gift of choice. When Terry and Sue and Stan and a couple more
came here for lunch, each one got a goodie bag with a jar of your
jam. When Terry posted here about the lunch, she referred to it as
the highlight of the lunch, or something similar. )

Therefore, imagine if I would have said that you give me all the jams
and jellies I want. What would your other friends have thought? "Why
Margaret and not I", that's what. They would have been sad. You
would have had to send jars to each and every one of them, in order to
cheer them up. I have reason to believe that your crushed heart is
smoothing out and your tears are drying up.

Never mind you...Poor old Maggie is jamless and it was her birthday not
long ago...She needs jam to pay off those security people who have video
footage of her untucking her dress from her pantyhose in the elevator.

Corn relish? Crabapple Jam? What the heck Tammy! I had my hopes on Dirt
Jelly! I had to pay a fortune to get a shipment from Gedney's of some
favorites. My friend and I will have to reorder but nothing to do with the
Preserving Queen; we both are now addicted to Gendney's hot dog sauce. We
feel vulnerable.

As we haven't talked for a while, let me send you my love. I'll email you
eventually!

Any time, Liam! Have you tried her Cherry Preserves? Fab. Order
some from Gedney's next time.

And Barb was right, it wasn't crabapple jam, but crabapple jelly. Not
my fave of her stuff. Prob because I'm far more into jammies than
jellies :-) I can't wait for the grape jelly though! I helped pick
the grapes!!

TammyM, we didn't do the Lucy and Ethel grape stomping thing though

Three jars (one 8-oz, two 4- oz) in today's outbound parcel post. For
you or gifts, Maybe in a meatball appetizer with some chili sauce. "-)
