REC: Miso Flat Iron Steak
Flat Iron Steak in Miso Marinade
1 lb Flat Iron Steak (ask the butcher) 2 TB. Red miso creamed with 2 TB. sake (or dry sherry) 1 tsp. chopped garlic (use fresh garlic) 1 tsp. sugar (necessary for browning and flavor) 1/8 tsp. pepper 2-3 TB water Marinate minute or flank steak in the mixture for one hour, turning once, at room temperature. Pan-fry or grill. Let steak rest for 5 minutes then slice diagonally. Severs 2. We grilled it on a gas barbeque, using wood chips for a smoky effect. Could be my new favorite way to fix steak.
