REC: Caipirinha (low carb version)
This is one of the latest "trendy" drinks, modified to be diabetic-friendly.
-= Exported from BigOven =- Low Carb Caipirinha This fresh, exotic cocktail is becoming as hot among international crowds as it is on Copacabana Beach. The traditional caipirinha blends Cachaça, sugar cane, lime juice and ice. This version is sugar free and diabetic friendly. Recipe By: Pete Romfh Serving Size: 1 Cuisine: Brazilian Main Ingredient: Rum Categories: Low Sugar, Diabetic, Vegetarian, Low Carb, Simple - Easy -= Ingredients =- 1 large lime ; - quartered 1/2 cup Ice ; - crushed 2 ounces Cachaça ; - or light rum 2 ounces Diet Lemon-Lime soda ; - 7-up or Sprite -= Instructions =- Wash the lime gently under water and dry. Cut the limes, muddle gently in a non-breakable glass to crush the fruit but not release too much of the oils from the skin. Add ice and shake vigorously. Pour in serving glass and fill with lemon-lime soda. Garnish with lime slice and serve. Caipirinha is pronounced ''''KIE-PUR-REEN-YAH'''' The traditional Caipirinha is a Brazilian cocktail made with Cachaça, sugar, and crushed limes, served over ice. It is always muddled (crushed with a masher or the blunt end of a wooden spoon). Make sure to muddle in a shaker or a sturdy, non-breakable glass.
