REC: Japanese Guacamole
Japanese Guacamole
This goes good with grilled salmon or chicken breasts. 3/4 cup shredded daikon (Japanese radish) 1/4 tsp salt 2 avocados, about 1 pound 1/3 cup finely sliced green onion 1/4 cup fresh salmon caviar (optional) 2 tbsp rice vinegar 1 tbsp soy sauce 1 tsp Wasabi paste (more or less to taste) Toss diakon with salt, drain in a colander for half an hour. Squeeze out as much liquid as possible; reserve. Coarsely mash avocados. Fold in remaining ingredients and reserved daikon. Best made immediately before serving. If stored, press plastic wrap against the surface to prevent browning. |

Daikon is a radish which is one of the crucifers (cabbage family) and probably helps with avoiding those cancers that have a diet dependent incidence. The thing that really got my attention was the spring onions. Spring onions seem to appear everywhere since I read that onion greens have such a high ORAC score. (ORAC = oxygen radical absorbency capacity which is basically a measure of their anti-aging properties) These days I use whole bunches of spring onions chopped up in Moroccan dishes and to my surprise they are not overpowering at all.
