Default Vegetarian Stir Fry

Stir fry for 3-4 minutes (or to desired vegetable crispness)
in 1 tablespoon olive oil:

3 sliced spring onions
1 sliced garlic clove
1 teaspoon of grated fresh ginger
125 gr (about 4 ounces) sliced mushrooms
175 gr (6 ounces) snow peas (could be mangetout? not sure
what the snow pea equivalent is) (ok, could be also sugar
peas).

Stir in:

1-2 teaspoons chili sauce (or a little more if using sweet
chili)
1 tablespoon salt reduced soy sauce
1 tablespoon sesame oil

Stir well, remove from heat and put a lid on the pan for 3-4
minutes (don't let the snow peas lose their bright green)

You can also stir through some hokkein noodles and slivered
almonds or cashew halves. For me the sesame oil is a must
but peanut oil would work as well.
