Default twice black chocolate truffles

This is a recipe I modified from one that used sugar out of "Souther
Cooking". I learned that the sugar free chocolate behaves differently
than the chocolate chips originally called for, but with some
experimentation, I was able to achieve really excellent results. This
is a "no sugar added" treat, since it has cream and "all fruit"
preserves, but no sugar called for in the recipe. These are very rich,
and taste like the expensive truffles you would buy from a fancy
chocolatier. A great treat for Christmas.
