Pupusas (Salvadoran Meat Pies)
This is a bit high in carbs but the protein equals the carb load so it's
fairly healthy, -= Exported from BigOven =- Salvadoran Pupusas Recipe By: Pete Romfh Serving Size: 8 Cuisine: Mexican Main Ingredient: Beans Categories: Lettuce, Tomato, Onion, Garlic, Bell pepper, Bean, Cheese, Celery, Mexican -= Ingredients =- 1/2 pound Chicken (Roasted, no skin) ; Coarsely chopped 1/2 pound Monterey Jack cheese ; Grated 1/2 cup onion ; Chopped 1/4 cup celery ; Chopped 1/4 cup bell pepper ; Chopped 1 clove garlic ; minced 1 cup Refried beans 1 tablespoon Lard or bacon drippings 1/2 cup Iceberg lettuce ; Shredded 1 large Tomato ; diced 8 raw Corn tortillas ; - 6 inch, ready to fry. -= Instructions =- In a small skillet, melt bacon drippings. Add garlic, celery, onion and garlic. Fry until onion is transparent and vegetables are tender. Remove from heat and add beans, lettuce, tomato, cheese and meat. Toss to blend. In center of each tortilla, spoon about 1/4 C filling. Fold tortilla in half and seal with a bit of water to make a dumpling. In a skillet, heat 1" of corn oil to 375 degrees. Cook each dumpling in oil for 3 minutes per side or until golden brown. Remove, drain on a rack and serve with salsa or Cortido. Each Pupusa contains: Cals: 264, FatCals: 113 Total Fat: 13g, SatFat: 7g, PolyFat: 1g, MonoFat: 4g Chol: 53mg, Sodium: 325mg, Potassium: 302mg. You do know that you can convert about half the protein in a meal into carbs, in the right circumstances? I don't see how that statement hangs together at all! It's 19g total carbs w/ 4g as fiber. Net is 15. Total protein is 19g so you get a reasonable amount of protein in the meal. Any food can be converted to carbs if you go into the right metabolic state, especially fats.
