Favourite LoCarb Meal?
 
One of my favourite Main Meals now, is to take two courgettes. Trim and Tail
them, then cut them lengthways into what might look like thick fillets of
fish. Sprinkle with salt and leave for ten minutes to draw out excess water,
then rinse and pat dry.

Rub on some olive oil, some crushed garlic and freshly ground black pepper
and a light sprinkle of fine sea salt. Leave for five minutes, then place
the "fillets" into a heated frying pan and fry each side until browned.
Reserve to a warm plate.

Then, take as many Green Beans as you want to eat, (frozen are best, but
defrosted first) and put these into a clean fresh hot fry-pan with a little
oil and a good pinch each, of Ground Cumin, Coriander, Turmeric and Chilli
powder, with a little grated fresh Ginger and some finely sliced Onions and
perhaps a few sliced mushrooms.

Toss this around in the pan until things start to brown a little - but do
NOT overcook, it should all still be quite firm at THIS stage.

Now add a little water to the pan and allow to bubble up, then put a lid on
and take away from the heat for a few minutes until it's all become quite
soft. Take off the lid and allow any remaining water to evaporate away.

Pile the bean mixture on the plate at the side of the fillets of Courgette.

Finally, take a large Hen Egg (I use a Duck egg) and separate the yolk out
from the white - toss away the white.

Break the raw yolk over the courgette fillets, like a cold sauce. Sprinkle
lightly with sea salt & Black pepper. Garnish with finely chopped Parsley.

EAT! Practically Carbohydrate free.

I go for rotissieried chicken and a side of steamed brocolli. If you spin
the chicken yourself it is very juicy and if you put thin slices of lime
under the skin...very tasty too. Also very low carb. Even lower if you
don't use the lime slices.
