Ice Cream Question!
Hi,
My boyfriend has diabetes type 1. He is very active, and if it wasn't for frequent hypos nobody would know that he had it. I have tried to help with the hypos by making very "balanced" GI food for him, e.g. some fast and plenty of slow carbs in all meals. I recently got an ice cream maker as a gift and have had lots of fun making home-made ice cream! Now I want to make some ice cream for Brian! He says his favourite flavour is rum & raisin. I made a batch which tastes fantastic. It contains the following: 2 egg yolks, 1.5 cup of cream, 0.5 cup molasses, 0.75 cup sweetener, pinch of salt, 0.5 cup raisins, 1 cup coconut milk and 5 bottle hats of dark Rum. Obvviously this is not healthy, but it tastes fabulous and everyone deserves a treat from time to time! My questions: Is my ice cream likely to be high, medium or low GI? (I can't even guess!) Am I fooling myself to think that it makes a difference to a diabetic whether I use a mix of sweetener,fruit sugar and molasses rather than normal white caster sugar? I use the above mix for baking as well. I feel as if I would almost poison my boyfriend if I was go cook things with sugar in it! I'd hate for him to have to take a special injection just for enjoying a treat. Any thoughts on this appreciated! Jo |

PJ - I'm betting you are a Type 1. I don't think that works the same in

I'm type 2. I don't actually "low-carb", but I do "low-spike". I've found that sometimes that's the same thing. I can't guarantee that low-carbing will improve your BGs if you are T2, but I can guarantee that high-carbing will make you spike and increase your HbA1c. I follow the testing advice from Jennifer at http://www.alt-support-diabetes.org/NewlyDiagnosed.htm. Are you T1 or T2? Cheers, Alan, T2 d&e, Australia.
