Are you ready for Easter?
I am! I made my husband's family's Easter pie recipe but I did do a bit of
a screw up. I used Ditalini and I think I should have used Acini de Pepe. These are savory pies. The idea is that you break your fast with a small piece of this very rich pie then go visiting. Each family has their own recipe so at each house, not only do you get to try the pie but they'll give you a little one to take home. These pies may have crusts but husband's family is Sicilian so they add pasta. Just a small amount of pasta to lighten up an otherwise heavy dish. You could leave that out though. I loosely followed this recipe: I could not find any tuma so added some other Italian cheeses. I don't have their (Bove's) actual recipe but do remember that it contained Parmesan and also a little white pepper. I also do not remember layering this dish. I believe it was all mixed together. This would make for a very low carb dish if you left out the pasta but... If it were me, I would add in some sort of vegetable to add lightness. And it does make a ton! If you have access to a deli counter with Italian meats and cheeses, you could buy small enough amounts to make just one pie. And really, you can vary what you put in there. It's one of those things that's never quite the same way twice. My husband's family tends to add whatever they have in the house. To round out this meal we are having Fritos Scoops with assorted dips, lots of raw veggies, Annie's Sour Cream and Onion Bunny crackers, mixed nuts, peanuts, pasta with Marinara and a small amount of mac and cheese for those who don't like or can't eat red sauce. Also, grapes, strawberries and apple slices. There are some really pretty cookies that I bought at Costco. They are individually wrapped and looked like flowers. I don't expect that anyone will really eat the cookies as we are not big on sweets but they were super pretty and my mom is allergic to real flowers so I thought they would make a nice decoration. My mom is getting ready to move into a 55 and up apartment very soon. She had put in her name on the waiting list but something became available right away. So... This rather puts a crimp how we would normally do a meal. Knowing that she would be moving to a place that supplies her meals (she will have a small kitchen), she got rid of most of her kitchen stuff. So I am having to supply everything. I am glad we have a Dollar Tree nearby! I was able to get Easter serving pieces, plates and other things there so I don't have to lug too many things from home. I realize that not everyone here celebrates Easter and our family (husband excepted) really only celebrates Spring and bunnies and flowers and stuff like that as we aren't really religious. But it is a good excuse to get the family together. Because we can't seem to do that very often any more. |

I'm one who celebrates Easter, when I was a kid it was a favorite because we girls always got a pretty dress and patent leather shoes for Easter Services. The boys got nice slacks, white shirts, and boy shoes. We usually had lamb and ham with lots of good side dishes. My grandmother always lived with us, so she made lots of fun stuff for us. This year, we're having ham, lamb, and several side dishes. DIL will bring dessert and since they are pretty much low carb too it will be something that all of us can enjoy. And usually white shoes, a new purse, hat, gloves and perhaps some jewelry. My mom always had me wear bracelets and necklaces but I wasn't allowed to pierce my ears until I was 16. |
